I am loving the venison!!!!

    Oh my gosh ladies! Dh and I decided this year to process our own venison instead of taking it somewhere to be made into sausage. We have enough sausage. So we did the whole thing in our kitchen. We put it on ice for 5 days, draining it and reapplying ice every day. Then he did all the cutting and I washed and packaged it. We had never done this before but we got large amounts of steaks, roasts and stew meat. It has been such a blessing to have this meat and I don't have to buy so much at the store.

    Last week I made stew and cornbread - everyone loved it. Friday I made venison tips and rice which was TO DIE FOR! Grace ate thirds and Sam was mad because she didn't get any - she was at a party and ate dinner there. Tonight it was just dh and I for dinner. I made a small venison roast with potatoes, carrots and all. I can't even tell you how delicious it was! If anyone wants recipes for venison let me know and I will give you the ones I have tried. The one for venison tips I came up with myself from several different recipes.

    Glad to hear you took the plunge and processed it yourself. We do ours, too, but we haven't ever drained it for 5 days like that. I'd be interested in reading more about that idea.

    Sure is nice to know you saved yourself a bunch of money, huh? My dh has also processed other people's deer for them for $75 a deer. They save money and we make some extra around Christmas time. :D

    I'd like to know what you do with your tips and rice that was soooooo wonderful!

    Sounds wonderful. Hubby has been itching to get into hunting. Maybe I should stop arguing.

    We also got a freezer full of venison. Carl didn't get one, but someone got a button-buck they didn't want to claim, and we got the meat from it. I think his cousin processed it himself. I'd love any recipes you have!!!

    Venison Tips and Rice

    1 pound venison stew meat
    1 green pepper, sliced
    1 red or yellow pepper, sliced
    1 onion, chopped
    2 tablespoons oil
    1 can beef broth
    soy sauce
    salt, pepper, steak seasoning
    1 tablespoon cornstarch
    rice

    I soak the venison in milk for an hour before hand it takes any gamey taste out although I have not always done so and I have yet to taste any gamey flavors.

    Marinade the meat in the broth, soy sauce, salt, pepper and seasoning for an hour or two. Heat 1 tablespoon oil in large skillet on medium heat, add meat and cook until brown and cooked through. Remove meat to another bowl. Heat additional oil and add peppers and onions and cook until tender, remove to bowl with meat. Put marinade into pan, bring to boil, then simmer for 1 minute and ad cornstarch. Mix well then add meat, onion and peppers back to pan and coat. Simmer 1 minute and serve over hot rice.

    Venison Roast

    Place roast in shallow pan and inject with melted butter. Coat with salt, pepper, hickory smoke seasoning. Arrange sliced onions, potatoes and carrots in pan. Add chopped garlic clove. Top with worchestershire sauce and the juice of half of one lemon. Place slices of other half of lemon in pan. Cover and cook at 350 for 2 - 3 hours depending on size of roast.

    We cooked a small roast last night because it was just the two of us. We cooked it at 350 degrees for 2 hours. A larger roast would need to cook for at least 3 hours to get it as tender as ours was. It was so tender and the flavor was delicious.

    We did that in order to drain as much blood out as possible before bringing it in our kitchen. We drained it everyday and added more ice each time. That way it was still messy but not as messy.

    Carl's friend hangs theirs in the garage. YUCK!!!

    I think I'll try the tips and rice recipe later this week!

    Our friend does it for us - we allow him to hunt - just add some to our freezer :) works out really well!!

    Definitely going to do the venison with rice dish - YUMMY!!!!!

    Kris I was thinking about you and my sister in law last night while I was eating my roast. Neither of you eat venison and I was thinking that you'd never know it - you'd think it was beef!

    I have to go back and edit my roast recipe - I forgot to add that since venison is such a lean meat we injected melted butter into the roast before cooking so it didn't dry out.

    I told her the same thing about the venison/vegetable soup I made, Tiffany! Some folk just don't appreciate good cooking, lol!

    I appreciate good cooking, however I am not a venison enthusiast. I've had it and I don't like the flavor it's got it's on flavor. I don't eat goat cheese for the same reason it tastes like a goat smells to me, maybe I have over active taste buds I don't know but it's not for me. However, I'm glad that there are people that enjoy hunting to feed their families and not for the sheer sport of it.

    To process it ourselves was a lot of work and took two full nights but it was worth every minute. It is a very satisfying feeling to know that my husband was able to provide for us in this way and that we were able to do this together. I told him while we were doing it that I know it is a lot of hard work but I was actually enjoying myself. I was hoping either he or my daughter would get another one this year but no such luck and he won't get another chance to hunt again since we are leaving soon for Minnesota and won't be back until the season is over.

    We do all our own too. It saves alot of money. I make my own sausage too. Have you ever tried canning venison? It turns out awesome! I just made soup with a can of it last week. Everyone loved it.

    We would like to try and make our own sausage next time. I have never canned anything! I've never learned. But I plan to learn very soon. We are moving to the country this summer and I am going to get my godmother to teach me how to can and to make homemade pickles!

    I canned peaches and green beans this year. Sunday night, I went down in the basement and brought up a can of both, and it is SO satisfying to do that!!!

    you know Tiffany and Jackie I was raised in Wisconsin, so I know all about hunting and yes all my brothers and father hunt and no I never ate the meat. Even when I worked at the hospital there was one lady there, she told me you never had it made right, she brought some in and didn't tell me I took a small dish and was sick for two days. So, I don't know. Maybe you two are the only two that know how to fix it. I have had so many ways its not funny and never liked it.
