Hey gang I am curious.....what is the one recipe that is your "go to" on a busy day...it's one that you know by heart. No real reason to actually need the recipe because you make it often. I will share mine. My family is a pasta family, so I am assuming it would work for gluten free families that use corn or rice pasta. "Tacos in Pasta" 1 pack of fun shaped pasta( fusilli or bow tie etc. ) About 1 pd. of ground turkey or beef 1 can of diced tomatoes 1 24oz. Jar of pace picante salsa ( we use mild so it's kid friendly) 1 8 oz. package of Neufchâtel cheese or low fat cream cheese Shredded cheese to sprinkle on top - Cook meat with diced tomatoes, start pot of water for pasta - when meat is close to being cooked then put pasta in to boil - next cut block of Neufchâtel cheese up into smaller chunks, drop into pan with meat. Add the salsa too. Stir as the cheese softens & spread evenly through the Pan. - spray a baking dish with non stick ( I use the long rectangular dish ...is it a 9 x 13??) - drain pasta & replace back into pot, adding the meat sauce. Stir it all together & pour into baking dish. - sprinkle top with your choice of cheese, bake at 350 for about 10 minutes. Easy peasy - just add a vegetable or salad & dinner is served! Salsa chicken. Chicken Breast Jar of Salsa Taco seasoning Shredded cheese. Preheat oven to 375 degrees F (190 degrees C) Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all. Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear. Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly. Top with sour cream if desired, and serve.
One of MY favorites: Tuscan Chicken (in the Crockpot) 4 4 oz Boneless/Skinless Chicken Breasts (or bigger....can do up to 6 breast halves) 1 Can Dice Tomatoes (with italian spices), drained 1 Can Great Northern Beans, drained and rinsed 2 medium to large zucchini, diced 1 8 oz can Tomato sauce 1 Tbs dried minced onion (or one small onion diced) 1 tsp dried minced garlic (or one small clove, minced) Place tomato sauce in the bottom of the crock pot. Place chicken overtop. Put diced tomatoes, then beans, then diced zucchini. Sprinkle in minced onion and minced garlic. Salt & Pepper to taste. Cook on high for 1 hour and low for 2 hours. Or until chicken is cooked thru (internal temperature 165 degrees). Serve with pasta or rice.
Manwiches (we serve them open faced) usually with fries or tater tots marinated chicken (grilled or grill pan)........ we keep the frozen bagged chicken on hand (flash frozen) bangers and mash (our new favorite, Italian sausage with mashed potatoes and a bit of thin gravy) soup for the winter or beef stew----- we try to cube up beef when its on sale, the size of the cubes lets me know what to make small for soup bigger for stew
Pancakes or waffles Oatmeal Pancakes: 2 eggs glug of oil (I don't measure, lol) 2 1/2 cups milk 1 1/4 cups oatmeal 1 1/4 - 1 1/2 cups flour (depending on how thick you like the batter) 2 TBSP sugar 1/2 tsp salt 1 1/2 TBSP baking powder It's a regular pancake recipe that I modified to make oatmeal pancakes. I don't measure very accurately, so it turns out differently every time
Something very quick and easy. Creamed Chicken Over Biscuits One can Cream of Chicken Soup One can chicken Mix together and serve over biscuits. Super easy, and kid friendly! Great when you forgot about dinner, or Dad's not home.
Heather, that reminds me of my multi-grain waffles: equal parts whole wheat flour, yellow corn meal, old-fashioned oats, all-bran cereal 2 eggs about the same volume of oil as eggs salt sugar baking powder vanilla, or whatever other flavorings you like - like almond extract maybe milk to get the consistency you like You can put raisins or chopped nuts if you like. I don't measure either, but if I use about a cup of each, I'll use 2 eggs, and if I use about half a cup of each I'll use one. Mix it all up and let it sit for a few minutes, so the bran softens in the milk (if you want to you could do that first before putting in all the other stuff) Bake in the waffle iron according to your waffle iron instructions... I usually make a big batch and put the extras in the freezer, then put one in the toaster for a quick breakfast... or supper, or snack, or whatever. We love breakfast for supper. I've also used similar batter to bake muffins, which also freeze well but don't usually last long enough to freeze.
Sounds good! I bet they would be nice and filling. DH definitely noticed when I make regular pancakes or waffles they aren't nearly as filling as when I make oatmeal ones.
I hate DH's Goulash recipe, but it's easy and he loves it: 1lb Ground Beef Large can tomato soup Elbow mac Boil the noodles til done. Brown the burger and season. Drain. Combine the tomato soup, GB, and noodles. Stir. Done.

Change it up on him a little bit....add 1 diced onion and use a large can of tomato juice (or better yet, V8) instead. I've had it both ways - your DH's way and my DH's Way (which he calls "Sketties")....I don't LOVE it, but I don't hate it , either.
Well, we've had a bunch of rain, and the last two days the basement has had this smell. We thought it was a kinda "musty" smell from all the rain, because the basement will get damp. WRONG!!! Today I found the source. It was several packages of hamburger, probably seven to ten pounds worth, that someone (possibly me) had removed from the freezer to get something else out, and it didn't get back in ! I really hated it, but at least I found the source of the smell! I don't want to open the trash can outside until our pick-up day, though!!!
enchilada casserole lb hamburger ranch beans cream of chicken or mushroom soup Ranch style beans (chili beans) red enchilada sauce tortillas Shreaded cheese You can do this in a pan or can mix it all together and place it in a baking dish.. We cook the hb meat, drain it then add all the other ingredients together with the meat. Don't drain the beans.. Then tear up flour tortillas and mix them in with everything else.. The tortillas will soak up the juices Then top with cheese of your choice. Either put it in the over at 350 until the cheese melts or cook on low covered until the cheese melts..
Blech! At least you found it a few days later. We had a smell in our house for probably 2 weeks or so that kept getting stronger. I just couldn't figure it out. Well, DH had been doing some electrical work, and turned off some breakers. One of those was to our deep freezer. There were 2 turkeys (free ones) and a chicken, and a pail of ice cream in there. That was a HORRIBLE smell. We ended up chucking the whole freezer. I'm pregnant and wasn't about to try to lean over the side and scrub the whole thing out.
I'm really late in seeing this...but I have a few really easy recipes I'd love to share. I'm almost embarrassed to say that all 3 involve Campbells soup. My Tuna Casserole (this is a favorite of my kids. I took two recipes, combined them and switched things up...turned out great & super easy) 1 box of mac n cheese, make according to directions but add a little bit more milk Then add: 1 can drained tuna 1 can cream of mushroom soup thawed peas ~ optional (I LOVE the peas in it, kids are just ok with it...so I usually only do half with peas) shredded cheddar cheese Mix this all up, spread in a buttered casserole dish (I use a 13x9" glass cake pan). Top with more shredded cheddar cheese and crushed potato chips. Bake @ 350 for 20 minutes. Chicken in the Crockpot Add skinless, boneless chicken breasts to the crock pot. Top with 2 cans of cream of mushroom soup (or 1 large can). Cook on low all day. Serve over rice. Pork in the Crockpot (do you love the names of my recipes? :lol: ) Add boneless pork to the crock pot, top with carrots (sliced or just toss in a bunch of baby carrots), and top with 2 cans of GOLDEN mushroom soup (hmm..not sure if there is a large can of this or not). Cook on low all day until done. This is best served with a box of Uncle Bens Broccoli Rice Au Gratin (it looks like this..but that's a crazy price). Yum, yum!
BBQ Chicken Sandwiches: Throw a few chicken breasts in the crock pot with BBQ sauce. Shred the chicken when done and serve on buns. I usually make homemade sweet potato fries with it. Roast Beef sandwiches on french bread: (I make one long sandwich and slice it when done.) Cook a roast in the crockpot and shred it. Place the roast on french bread. Add provolone cheese and let it melt. Add mayo, tomatoes, or whatever else you like. Slice and serve!!
