This isn't my recipe but I do love salad with manderine oranges. (and almonds too). The mandarin oranges and caramelized almonds really jazz it up. You may want to double the amount of salad dressing if you like a lot of dressing on your salad. The amount in the recipe is just enough to lightly coat the salad. Green Salad with Mandarin Oranges and Caramelized Almonds2 tablespoons minced parsley 2 tablespoons balsamic vinegar 1 tablespoon extra virgin olive oil 1 small clove garlic -- minced 1/4 teaspoon sugar 1/4 teaspoon salt 1/4 teaspoon freshly ground black pepper 8 cups romaine lettuce -- torn 1 small red onion -- sliced thin 1 can mandarin oranges (11 ounces) -- drained 1/4 cup almonds 2 tablespoons sugar 1. In a small jar with a tight-fitting lid or in a small bowl, combine the parsley, vinegar, oil, garlic, sugar, salt, pepper and 1 tablespoon water; cover and shake well or whisk until blended. 2. To caramelize the almonds combine almonds and sugar in a heavy saucepan over medium heat. Stir constantly until golden. Pour onto wax paper and cool. Break into pieces. 3. In a large bowl, combine the lettuce and onion slices. Add the dressing; toss to coat. Serve, topped with orange sections and caramelized almonds.
what resturant?? It does sound familure to me to, but we have salad a lot in the summer and I have one kid that wont eat salad but will eat mandarine oranges. we like red onion in our salad too. I can't wait to try the dressing.
Yum! That sounds good! Thank you for posting that. I'll have to give it a try. I know another good salad recipe with mandarin oranges. Actually, I only know the ingredients. I don't know how much of each. Fresh lettuce, fresh spinach, craisins (dried cranberries), unsalted peanuts, chop suey/Chinese noodles (is that the right name?...those skinny brown crunchy things), fresh sliced strawberries, fresh chunks of grapefruit (I like ruby red from TX), fresh or canned pineapple chunks and finally mandarin orange segments. Top it off with raspberry vinegarette dressing!
