Hey Deanna, this was a great idea! Thanks for asking! :D

I'm a veggie (not vegan), so most of you don't need what I would offer, but I can change these ideas around and make some good stuff from them!

    Thanks everyone!

Deena, go ahead and set me up with something vegetarian--we would totally love it.

Yes. LOL :D I never got the official diagnosis b/c we did want to drop the coin to pay the co-pay for the test! LOL :D

BUT...my gastro mentioned Celiac during a colonoscopy and he wanted to do the upper gi test (endoscopy?) to confirm Celiac (my blood work was inconclusive). We decided to save the money and just try a gluten free diet to see if it helped. It did immensely.

You are welcome to check out my blog...it's all about my recipe conversions and such. :D

I glanced at it and bookmarked it. I'm hoping I can get time to read more this weekend. :)

Luckily our ins covered 100% of ds's testing.

:) I hope it helps you! Please if you have questions, or have a recipe you need help converting - I'm willing to try as long as you don't mind me posting my results. :D

Actually last night at dinner I made Carnitas - which is a pulled pork type Mexican dish. It was DELICIOUS!!!! :D

I'm going to be posting on my blog (and here too) as soon as our weekend company leaves.

My husband said it was better than Chipotle's (our favorite Mexican Grill)

Someone posted a recipe awhile back for what I think was called Santa Fe Bean soup and it is wonderful! I've wanted to do it with nachos but haven't gotten a chance to try it. The first batch I made, my youngest dgd was only 9 or 10 mo and she went crazy over it! I was afraid it would be too spicy but she didn't care!
