new cookbook-- for kids! Recipes to share

    I got thetaste of home Good Foodkids love cookbook on recipe cards. I wanted to share a few of them.

    Egg n' cheeese egg loaf

    6 eggs
    3/4 c. milk
    1 t. prepared mustard
    1 1/2 c. flour
    2 1/2 t. baking powder
    1/4 t. salt
    6 bacon strips, cooked and crumbled
    1 c. fully cooked ham, cubed
    4 oz. cheddar cheese, cut in 1/2 inch cubes
    4 oz. monteray jack cheese, cut into 1/2 inch cubes

    In a mixing bow, beat eggs until frothy, about 1 minu. Add milk an mustard. Combine the flour baking powder and salt. Add to the egg mixture and beat until smooth. Stir in bacon, ham and cheeses. Transfer to a greased and floured 9X5X3 loaf pan. Bake uncovered, at 350 for 55-60 min. or until golden brown and a toothpick inserted near the center comes out clean. Cool for 10-15 minutes Run a knife around edge of pan to remove. Slice and serve warm. Refrigerate leftovers. serves 6-8

    Oat meal Breakfast Bars

    4 c. quick-cooking oats
    1 c. packed brown sugar
    1 t. salt
    1 1/2 c. chopped walnuts
    1 c. flaked coconut
    3/4 c. butter, melted
    3/4 c. orange marmalade

    In a mising bowl, combine, the oats, brown sugar and salt. Stir in remaining ingredients and mix well. PRess into a greased 15X10X1 baking pan. Bake at 425 for 15-17 minutes or until golden brown.,, Cool on a wire rack, yeild about 2 1/2 dozen.


    Cinnamon Apples

    2 c. water
    3/4c. red hot candies
    1/3 c. sugar
    6 medium tart apples, peeled and quartered

    In a large saucepan over medium heat bring water, candies, and sugar to a oil, stirring constantly, until candies and sugar are dissolved. Reduce heat, carefully add apples. Cook, uncovered until apples are tender. Cool slightly, With a slotted spoon transfer apples to a serving dish pour sugar syrup over apples cover and refrigerate for at least 3 hours.

    Biscuit Tostadas

    1 lb. ground beef
    1 jar (16 oz.)salsa, divided
    1 tube grands biscuts
    2 c. shredded colby montery jack cheese
    2 c. shredded lettuce

    In a skillet, cook beef over medium heat until no longer pink, drain add 1 1/2 c. of the salsa heat through. split each biscut in half, flatten into 4 inch rounds on a ungreased baking sheets. Bake at 350 for 10-12 minutes or until golden brown. Top with meat mixture, cheese, lettuce and remaining salsa. 16 servings

    Pizza Grilled Cheese

    1 T. butter, softened
    2 slices bread

    1 slice provolone or mozzarella cheese
    6 slices peperoni
    3 T. pizza sauce, more for dipping if desirred

    Butter one side of each slice of bread. Place one slice in a skillet, butter side down. Top with the cheese, pepperoni, pizza sauce and second bread slice, butter side up. Cook over med. heat until golden brown. turning once. Serve with additional pizza sauce if desiered.

    Tater Taco Casserole

    2 lb.ground beef
    1/4 C. onion, chopped
    1 envelope taco seasoning
    2/3 c. waer
    1 can (11 oz.) whole kernel corn, drained
    1 can (11 oz.) condensed fiesta nacho soup, undiluted
    1 pkg. (32 oz.) tatertots

    In a skillet, cook beef and onion over medium heat until no longer pink, drain, stir in taco seasoning and water, simmer uncovered for 5 min, Addcorn and soup, mix well. Transfer to a greased 13X9 baking dish, Arrange tater tots in a single layer over the top, bake uncovered at 360 for 30-35 min. or until potatles are crispy, and golden borown serves 8 ( I think if you like cheese you could add some shreded cheese the last few minutes of cooking?)

    Cola Chicken

    1/2 c. chopped onion
    2T. veg. oil
    4 boneless skinless chicken breast halves
    1 can cola
    1 C. ketchup
    1/8 t. garlic powder
    1/8 t. salt
    1/8 t. pepper
    4 1/2 t. cornstarch
    4 T. cold water

    In a skillet, saute onion in oil until tender add chicken brown on all sides, carefully add cola, ketchup, seasonings, cover and simmer for 25-30 min. or until chicken juices run clear. Remove the chicken and keep warm. Combine the cornstarch and cold water until smooth, add to the skillet, Bring to a boil, cook and stir for 2 minutes or until thickened. Return chicken to the pan heat through, serves 4

    I'll do more later if any one wants them.

    Becky I am glad that you and I have some of the same problems, My oldest son is the only one who isn't picky, Donald, doesn't eat anything but instant mashed potatoes, eggo waffles, hotdogs and pizza and chicken nuggets!, he eats cereal (thankgoodness he likes the good for you ones like life, cherreos, corn flakes). Sammie, eats fruit, and very little else, Eva eats ok, but gets into all the junk food, If I make spaghetti, the little kids want butter instead of sauce even though they all like to help make it. I am so tired of the picky ness, even my husband is picky, even though he says he isn't but will only eat chicken fried or on the grill and in the chicken bowtie soup I make, that limits our menu planning! You couldn't tell by looking at any of us that we are picky eaters though, except for Donald (duckie) he is so skinny I worry about him, but yet I hear that when I was his age, the adults worried about me too.;)

    I'm mean. When Sami tries being picky, I just refuse to serve all the stuff she is wanting all the time. She gets hungry after awhile and eats.

    I add the items she likes back in to our menus after she starts eating properly on a regular basis. If she starts in again when I let her have what she likes again, I just tell her, "I guess I won't make Chicken Nuggets for dinner anymore if you aren't going to eat your other food as well!" It works.

    there is a diffrence between fixating on one or two foods (refusing to eat any other ones) and truly not liking a particular food. I won't force her to eat Cool Whip, She truly hates it. But no kid truly hates ALL foods but Pizza and corndogs (my friends kids) they just prefer it and get their way too much.

    She is in one of those phases right now, last night she cried cause what I made for dinner was all she got to eat. (she wanted french fries and Sprite and I was cruel enough to serve stir-fry chicken and veggies over rice) I know it's because she spent. Friday, saturday and most of yesterday at the Nana's house. My mother spoils here and lets her get away with too much. We always have a tantrum about one thing or another the night she returns home from there.

    Oh! my mom kept all the kids at her house saturday, and when they came home at 9:30 on sunday, Eva had a pop with her! she was so proud because she opened it all by herself, and granted it was diet, but I would never give the kids pop at breakfast time, but then they said oh no mom we had coffee with breakfast! Ok, I admit I add a few drops of coffee to their milk to flavor it (and when my son was on chemo it was the only thing that hid the taste of the medicine) I don't mind the little changes when we make something, like the butter on noodles instead of sauce, or if we are making tacos and some one wants the shells broken like nachos, i don't care its all the same stuff. But like last night I made sausage biscuts for me and my husband, but the kids don't like sausage (they say its too spicy) so I popped some eggos in the toaster, put some peanutbutter and sliced some fruit, one kid didn't like pineapple so I cut an apple one kid didn't like either so he had a banana. just a little different not too much extra work.

    I love the sound of those recipies, but cola on chicken?? I am not sure about that one :shock: I also have a very picky dd, she eats very little, though what she does eat is for the most part very healthy. What boggles my mind is that she hates candy! The opposite of her mom :roll: I LOVE junk food, way to much!
    We made dd friendly cookbooks for everyone for Christmas a few years ago, it was a great presant. In it we also added many photocopies of her artwork and pictures of her cooking. Anyway,, lets get cooking Tracy

    I think I saw this at Farm and Fleet this past weekend. I almost got it. I may have to go back and get one. They were only $6.

    Here's an easy one from Rachael Ray 30 minute Meals-
    Spaghetti Carbonara
    1/4lb bacon
    1 pound linguine pasta
    3 cloves garlic, minced
    3T extra virgin olive oil
    2 eggs beaten with a splash of milk and a few spoons of boiling water from pasta
    1/2 c. grated parmigiano or romano cheese
    a couple shakes red pepper flakes
    a handful of parsely
    pepper to taste

    Cook the bacon and when it begins to brown move it to paper towels to absorb the grease.
    Cook the pasta until al dente. Take a few spoons of the water to add to your eggs later.
    Heat garlic and olive oil in a big skillet over very low heat. Add red pepper flakes.
    Drain the pasta, rinse and drain well.
    Toss pasta in the pan with the garlic and oil and coat evenly.
    Toss in the bacon. Pour egg mixture evenly over pasta.
    Toss the pasta fast and firmly.
    Turn off the heat. Add cheese, parsely and a generous dose of black pepper.
    Serves 4

    This is on my menu for Wednesday, without the garlic and red pepper.

    There's another recipe where she makes meatballs and puts a tiny square of cheese in the center, pressing the ground beef around it. She puts these in a sub.

    That's our Thursday supper!

    I want to make a dish I think I saw here, spiral noodles, pasta sauce, cheese and maybe meat like hamburger or sausage, its baked and the noodles aren't cooked I think can some one tell me??

    the taste of home book I mentioned is $3.99 I saw it at the k-mart check out stand, those check out stand books are my weakness, I aslo got the cookie and bar one. I get the betty crocker one thru the mail, but my hubby forgets and buys me a duplicate some times, I have soooooooooo many cook books, my husband doesn't mind because his weakness is tools... he has as many tools as I have cookbooks he thinks..... I think I am the winner at that one though...
    by the way, we love Racheal ray, We bought each of the girls the cookbook for kids last year, there is a picture of a little girl that kind of looks like Eva, she first thought it was her, she thinks all blond curlyhaired, blue blue eyed 5 year olds look like her. lol

    oh, I wanted to answer the cola chicken question, i think that it makes kind of a bbq sauce when added to the other ingredients, at least thats what the picture looked like and if you think of it, bbq sauce usualy has lots of sugar, just like soda, (pop where I'm from)

    some of the other recipes were: cheesy potato beef bake, chicken nugget casserole, pizza biscut bears, wagon wheel chili, tender chicken nuggets, chili bread, nutty chicken fingers, cheeseburger mini muffins, peanut butter n' jelly mini muffins, butterfly sandwiches, apple -raisin lady bug, Oodles of noodles soup, pinto bean trunovers, pizza pancakes, oat meal breakfast bars, banana chip muffins, lady bug appetizers, panana pear caterpillar and rocky road fudge pops, ...... let me know if any one wants any of these recipes.

    $3.99!?!? Maybe it's a different book I saw. If it's not, I'm glad I didn't buy it there then.

    That sounds like a great cookbook~ I, too, am a cookbook lover~ I'll have to look for that one.
    Oh, and the Coke (or whatever cola) tends to make for a sweet taste~ like you said~ when mixed with ketchup it will probably make a bar-be-que type sauce.
    Did I ever share the recipe for Coke Roast? It's yummy and~ oh~ so easy!

    oh ladies, Don't knock the cola chicken! :) my recipe is that I put a can of soda or beer up insode a whole fryer chicken add seasoning to the outside and bake it for two hours. (the soda sprays out of the can basting the chicken.) It looks silly sitting up there in the oven (My dad does it on the grill) BUT It is the best chicken! When we do it with soda it has a bit of a sweet taste to it (maybe why it's reccommended for getting kids to eat it).

    I've done the beer butt chicken and it's SOOOOOO good! Especially on the grill.

    I bought one of these contraptions that you put the whole chicken on and roast it in the oven. You can fill the reservior with whatever liquid you choose. I love it! My dh says it looks like a chicken on a potty though??? He's strange!

    I like to pour coke over ham too. a half can at a time. I have always wanted to do the beer can/coke can chicken, I've seen it on some cooking shows.

    Jen, The book is a great one for kids recipes, its tatse of home, fun, tasty recipes kids& moms agree on on, the title is GOOD FOOD KIDS LOVE its in recipe card format, (each page has 2 cards but I never take them out the'll just get lost around here) and the picture is of Lunch Box Pizzas. All of the 76 recipes have pictures! :)

    Do you all remember how I wanted to get together a recipe exchange??? We I'm doing in on the TOH site and I got my first 2 packets already, it is so much fun, 2 of the 3 people I sent to already got mine (1 went to canada). The ones I got were so cute on the cutest recipe cards! We are already talking about next month, sending our five plus 1 extra for a family favorite for thanksgiving then in Dec. one for that holiday favorite!! Those of you who love recipes and gettting new ones should really think about joining for next month. one person does all the e-mailing and these ladies have been doing this for quite a long time! There were only 3-4 new people including me. And the only adresses you get are the 2-3 people you are to send out its a pretty safe thing I think. I'm also doing a christmas card exchange over there where every one who signs up (and there were so many that they are making 2 lists) sends a card with a recipe. as of yet there are 40 people on each list--40 christmas cards and recipes! :) I think it will be fun!----Last year I think we only got 5-6 christmas cards. My family just doesn't do them (except me) I think that its kind of sad that so many people these days say "oh I'm so bussy".

    I just have to add this one! I saw it in my e-mail from Pillsbury, its bugs in a blanket!

    you take a can of pillsbury bread sticks, seperate, and cut in half and wrap a little smokie in each half, bake in 375 oven (probably for how ever long the package suggest for the breadstick) When they are done remove from cookie sheet then use 6 shoe string potatoe chips for legs (just poke them in) and 2 for the entenna. use bbq sauce, mustard and or ketchup to drop polka dots on top to decorate bug. they are so cute and I'm sure if you go to the pillsbury website you can get better instructions.

    I jsut made these the other day with the biscuts, cutting into 3rds, and wrapping, but I did not know about the "bug" idea. We just call them pigs in a blanket.

    We do the Chicken on a beer can too sometimes, but started the soda because my friend can't have the barley in beer. Oh yeah it's even better on the grill.

    My friend has one of those contraptions too. It makes it WAY easier to get the chicken off the can but really isn't required.
