How about tater tot casserole???? My kids chow this down like it's nothing...I put ground turkey, cream of mushroom soup, shredded cheese and tater tots in a 13 x 9 pan and then bake at 350 until bubbly and the tots are crisp on top. Kids love it you can also use diced chicken, or turkey or ground beef.
Here's a rough draft of my weekly Dinner Menu: Sunday - Rice Monday - Soup Tuesday - Paella / Pelau Wednesday – Burritos Thursday – International Buffet (Veggie Mandoo, Kim Bop, Fries, etc) Friday – Soup Saturday – Ziti or Mac Pie , Rice & Lentils, etc
We do chicken quesadillas (sp?) & wraps. Sometimes just nachos with chicken or steak on them. (For lunches) Turkey Pot Pie Do you do like potato soup with ham leftovers?
Peanut butter one is easy just fry it up like you would a normal fried chicken with what ever season you want. I lightly coat it with salt, pepper, flour, garlic salt then just before its done just add some peanut butter to the top to melt a bit, I usually use a bit of olive oil to fry chicken so its goes into that for a sauce. Here is one they use some tomotoes to it http://allrecipes.com/Recipe/Peanut-Butter-Chicken/Detail.aspx Wow twice you are a very veggie people ...that sounds so good for you your menu. Sam
I try to maintain balance ... even in knowing what I'm going to cook for the following day. It keeps me abreast of things. We've always had this schedule, and it works FOR US.
Tater Tot Casserole: I just tried a variation of this casserole last week. It is the same, but you add a 1# bag of frozen mixed veggies. Adds a bit of color/fiber/nutrition. And my kids did not mind one bit! Kerri
