Potato ideas please

    So I go and buy this huge bag of potatos and relize we are not gonna eat them all. You can only have so many french fries and only I like baked potatos or potato soup. Ya had our share of mashed too. Anything else with them? Or just suck it up and next time only buy like 3 at a time for meals.

    You could shred them, like hash browns.
    When I make shredded potatoes at the last 5 minutes of cooking I add 4-5 beaten eggs , 4-5 diced green onions and about 2 teaspoons of nutmeg to the potatoes.
    Just keep flipping the potatoes and eggs mixture around, until they resemble scrambled eggs. This is an old German recipe from my grandmother. I serve this with either veal or bratwurst.


    Other ideas:

    Potato salad, hot ( with a vinegar) or cold ( with mayo, etc)

    Diced potatoes with bell peppers and onion ( O'Brien style)

    Baked potatoes with chili

    Potato pancakes

    Potato Dumplings with gravy

    Shepards pie ( with mashed potato top)

    Baked potatoes with broccoli and cheese sauce

    Roasted potatoes ( large diced, smaller then quartered size) with rosemary, olive oil , garlic powder and salt/pepper. I roast carrots along with them ( cut in 3rds) and whole cloves of garlic too, shallow pan , 325 degrees until fork tender ( maybe 25-30 mins.)

    I do the hash browns and sheppards pie. I also found a recipie for a really good cassarole type thing.
    dice an onion, melt a couple TBSP of butter in a baking dish. Mix together your onion, diced potatoes and some bacon. Put this all in the pan and sprinkle some lemon pepper on it. Cover and bake at 350 for 30-45 min. My family loves it.
    You may try gnocchi as well there are some good recipies online for this. It is a potatoe pasta very good!

    not healthy, but yummy

    We love fried potatoes. We melt butter , about a quarter of an inch in bottom of pan, or you could you crisco or canola oil. Then we either dice or slice thinly the potatoes and season with garlic salt and pepper, and keep turning until cooked through then we eat with Kiebasa and sourkraut. My dd dips them n keptchup. Not healthy and not very often, but good for a change.

    We like our potatoes sliced about 1/2 in thick and then cut into quarters and then we add quartered slices of kilbasa and fry with onions. YUMMY!

    I was going to suggest fried taters as well. They are great. Not something you want all the time (well, I do, but not if you're into very healthy cooking lol), but definitely gooood! :)

    Also tater cakes, but I think that may be the same as the afore mentioned potato pancakes.
    It's just left over mashed potatoes mixed with an egg and then shaped into patties and fried up in a little butter or oil.

    There is also a good German variation where you use fresh shredded potatoes and mix with a pinch of flour, egg, salt/pepper then shape and fry.

    I don't think anyone mentioned scallop potatoes either? cut into thin disks and baked with a cheese sauce like a casserole.

    Also, meat and taters. You take pork and cook it up in a sauce pan (we typically just canned it before) and add smaller new taters or regular potatoes.
    mmmm...and you can also make green beans with potatoes, okay, now I'm hungry.

    <raises hand and jumps up and down> Oooh, ooh, I've got one that no one mentioned! Science fair project! Put one of them, at least (you could do more than one per kid!) in a cup with toothpicks, in the sunlight, and voila, root study!

    Also, you can cut imprints in the potatos to make customized stamps! Just add ink!

    Yes, I am such a great chef... :D

    Cube 5-6 med. potatoes. Toss with 1/4 c. oil. Add a packet of onion soup mix. Coat well, and bake at 350 for 1 hour. Whenever I make these I get loads of compliments. I got the recipe from a box of Liton onion soup mix.

    Smashed potatoes:
    Boil and mash (but not blend). Add butter, cheese, sour cream, chives, crimbled bacon, salt, & pepper.

    Sometimes I cook as above but only add butter, garlic salt, and pepper.

    yum yum potatoes

    I have taken diced potatoes, cream of chicken soup, sour cream, and shredded chedder cheese, mix together and bake to potatoes are tender. Very yummy.

    I use potatoes in vegetable beef soup and chicken pot pie. Another option is to throw them in a crockpot with a roast and some carrots, cabbage, and onions.

    I totally forgot about the craft/science part of the potato. gonna by some toothpics today. :) I look forward to doing more things with our potatos. Hope the kidslike it because I am a big potato person them, not so much.

    My husband makes potatoes that we love but he isn't here right now. I think this is right though.

    Peel potatoes and cut them into about 1/2 inch thick slices, boil them until they are partially done. Drain the water from them. While they are boiling prepare a mixture of a stick of melted butter, 1/2 cup sugar and nutmeg. I don't know how much nutmeg he uses but I would guess about a 1/2 teaspoon. Dredge the slices of potatoes in this mixture and then grill them on the grill as you cook your steak or chicken. We even like them with hamburgers. He calls them carmelized potatoes. They should be browned and have grill marks on them when done. They are worth the effort!

    Along the lines of fried potatoes, one night a week I fix a skillet meal. Sort of like stir fry, but I start out with potatoes, then add onions, peppers, corn, carrots, sliced smoked sausage, and just various vegetable that I have available. The potatoes seem to fill it out.

    Potatoes will keep a long time as long as they are kept cool. If you have room in your refrigerator, keep them in there. If you have a basement, you can keep them there. I just bought 100 pounds of potatoes and plan on keeping them cool. I might even go back and get another 100 pounds. I paid $20 for 100 pounds. Not too bad here. Keep picking the "eyes" off if they start to sprout.

    we love peeling potatoes, fry in butter, with chopped onions till done, oh don't forget to season.
    Then when down add cheese, let melt and enjoy....

    This is a bit off the subject, but it just reminded me...My mom lives near a farm that grows potatoes for Frito-Lay. After harvest, they will make huge piles of "culls" I guess you would call them. They are the potatoes that have big eyes on them or other blemishes where they won't make good potato chips.

    People can just come by and get the culls if they want them. My mom got some and they make the best fried potatoes EVER! To bake them or mash them, they are really dry and not good, but since they are bred for potato chips they are perfect for slicing and frying. Anyway, I wish that they were available in stores. Most of the time we bake or boil our potatoes, but sometimes it is nice to have fried potatoes.

    We use a lot of potatoes. I usually pay $3.99 for a 10 pound back. I went to WinCo yesterday and I got a 10 pound bag for .98 cents. The potatoes were just as nice as the potatoes I usually purchase.

    What about Twice-baked potatoes? Or a cheesy hashbrown casserole?

    I like to make fried potatoes as well. Not super-healthy, but oh-so-delicious! Cube the potatoes (skins on), fry with chopped onion in bacon grease or vege oil, seasoned with cajun seasoning, salt and pepper (while cooking). If you make it with bacon, put the crumbled bacon back into the potatoes and stir in before serving. This is especially good as a side at a fish fry or with ham and beans (and cornbread muffins).

    I also like to make baked potatoes and add taco meat, cheese, jalapenos, etc. on top. You can place whatever you like on your tacos on the table and let everyone choose what they'd like to put on their own potato taco. (kids especially like the self-serve aspect) You can either do shredded cheese or buy that ready-made cheese sauce to heat and put on your potatoes.

    Another potato favorite of my family: Dice the potatoes about 1/4 in dice along with some red and green bell pepper and onion. Saute until soft then add one jar of salsa and some shredded cheddar cheese cook until heated through and cheese is bubbly.
