Christmas Dinner Leftovers....

    What do YOU do???

    So far I've made:

    Turkey Noodle Soup & Turkey Cranberry Wreath (turkey salad baked in crescent rolls)

    Two 13 X 9 pans of Macaroni & Cheese with Ham (in freezer for a goto meal later)

    1 Quart of Deviled Ham Salad (our first time making it, pretty yummy actually!)

    Christmas Dinner Leftover Casserole - basically I put the leftover stuffing, half of the leftover corn pudding, a bunch of turkey, a can of cream of mushroom soup and a bit of cream. I mixed it all up and pressed into a 13 X 9" pan and sprinkled top with bread crumbs and parmesan cheese. (in freezer for a goto meal later)


    Still to come:

    Turkey Vegetable Soup (boiling drumsticks & wings right now for more stock) - we'll end up with a gallon of it. I'll freeze 1/2 for a quick lunch/small dinner later.

    Split Pea & Ham Soup (hambone's in the freezer awaiting it's big day) - same as with the turkey soup - we'll get about a gallon and freeze half.

    Creamed Corn Soup (leftover corn pudding mixed with cream and stock then processed smooth with my brand new cuisinart stick blender!) I'm not sure how much I'll end up with. I think we'll eat this all in one sitting, probably (we don't have too much corn pudding left). This is one I've never done before!


    And of course we had turkey sandwiches, ham sandwiches and general nibbling of the leftovers.

    I froze one of the Coconut Creme Pies my aunt brought for Christmas day...we have to eat the other before it goes bad!

    Can you tell that we just overbought food for Christmas Day? And we had 3 guests not show. And only one person took leftovers with them. NOT that I'm complaining!!!

    We had a ham and some sides for Christams dinner. The side dishes went fast so only one day's worth of those. We had a lot of ham though.

    So we had...

    Ham sandwiches
    Ham steak
    Omelets ( ham, cheese, geen onions)
    Ham quiche
    Ham Hash ( like corned beef hash)

    <sigh> We didn't have many leftovers this year >:/

    The ham I froze - mostly in slices for sandwiches, but some chucnks and the bone for making soup and cooking beans.

    The sweet potatoes turned out AWFUL. They actually got thrown away.

    The salad froze in the refrigerator (argh!).

    The kids ate all the broccoli (no leftovers).

    We ate all the rolls.

    Oh - I made cookies and almond torte balls for desserts. The cookies are steadily being devoured and the remaining torte balls are hidden in the freezer.

    Turkey Sheppard's Pie
    Put chunks of turkey stuffing and gravy and mix together...put in a 13 x 9 pan and then top with mashed sweet potatoes...serve with a veggie...YUMMY!!!! It's one of the very few ways I'll eat sweet potatoes.

    Also use the ham bone and any meat left stuck to it in a pot with some navy beans and make ham and navy bean soup.

    I offered the ham bone (VERY meaty!!!) to my mil just for that, but she didn't want it. She doesn't do any pork anymore. And I don't do beans like that! So I'm sorry to say it got thrown out.

    We celebrated with my sister. She sent leftovers home with us and they are still in the freezer. I haven't really thought about what I will make with them.

    We down sized this year as everyone gets burned out on left overs!

    Another thing I do with the ham bones is to put them in a crock pot with some potatoes and water and let it cook for about 4-6 hours on low then about 30 - 45 min before I serve I add some green beans...my kids love this.

    :( I ruined the split pea soup!!! The bottom burned just awful! Nearly ruined the pan! I don't know what happened. I've made this before. I guess I was too distracted or something! WAAAHHH No split pea soup!!!!

    The bottom of the inside of the pan? Try baking soda on it! I burnt something terrible not too long ago, and thought it was ruined, and the baking soda did a great job!
