I love homemade bread. I have a vitamix and have been girinding my own wheat and making honey whole wheat bread. My family loves it. I make a loaf and it is gone. Yummy! I make homemade rolls and pizza crust, cinnamon rolls. Have you been to www.preparedpantry.com ? They have a wonderfull ebook that you can sign up for and they email you a chapter at a time. There are some really great tips in it. And a lot of knowledge. Hope this helps.

I'd love a good cinnamon roll recipe. I made some from a magazine recipe that LOOKED good...and they were, but not the kind of consistancy that I like. I want chewy dough, not soft roll-like dough (does that make sense?).

My recipe is pretty simple and I found it in my Betty Crocker basics book I got when I got married.

    Honey Whole Wheat Bread

    3 cups whole wheat flour
    1/3 cup honey
1/4 cup shortening (veg. oil has worked just as well for me)
    1 TB salt
2 pkg. or 4 1/2 tsp. dry yeast
1 heaping TB flax seed (optional)
2 1/4 cups very warm water
3-4 cups all purpose flour (I only use max. 2)
    ----
mix whole wheat flour, honey, oil, salt, yeast and flax seed. Add warm water, stir. Begin adding all purpose flour - I do one cup and then dump on my floured table and begin kneading in the next 1/2 cup or so.

Knead 10 min. Place in oiled bowl cover loosely with saran wrap. I put it in the microwave (off, not on) to sit. Let rise about an hour.

Deflate, divide into 2 equal parts, roll out each, shape into 2 loaves, place in oiled pans, cover and let rise another 30-50 min.

Oven rack at middle position, bake at 350 for approx. 20 min., or until tops are dark golden brown and sound hollow when tapped.

Has come out great everytime! Reduce baking time if doing smaller things like small loaves, rolls or breadsticks (otherwise they're tough...experience speaking there LOL).

It is yummy. Here is the recipe:

    1 1/4 cups warm water
    1 pkg yeast
    2 Tblsp honey
    2 1/2 whole wheat flour

Mix it up, it will be sticky, pour into greased bread pan, let rise to top of pan and bake @350 for 35 min.

    Jackie-
We tried breadsticks with the "singing bread" tonight. We made them pretty thick, but they were still like pretzels...very hard. I only baked them about 15 minutes. The middle (that's usually the nice moist part of a loaf) was practically not even there. I wonder what would happen if they got baked just 10 minutes...
Let me know if you do any experimenting.
