Favorite at home meals...

    When I sat down to do our meals for the next 2 weeks, I realized I pretty much have the same requests every 2 weeks....tacos, spaghetti, pizza...and then the same switched out menu items. What's your family's favorite at home meal?

    Some of our regular meals are:

    * sausage-pasta bake
    * roast lemon chicken
    *sausage wellingtons
    *chicken breasts with Jarlsburg cheese
    * pan fried pork and apples
    *parsley and bacon pasta
    *chicken pizziola
    * meatballs and rissoni
    *chicken balls ( not "those" balls)
    * hoisin lamb
    *15 minute lasagne
    and
    * porcupine meatballs

    we have pizza every friday (home made or ordered in)

    hamburgers on the grill

    and my kids are asking for ITALIAN BEEF sandwiches, its a beef roast that sits int he crockpot all day with italian dressing mix, and a bunch of seasonings and herbs (garlic powder, onion powder, parsley, oregano, basil, salt, pepper, red pepper flakes etc..) and I add a bit of water and beef bouilon ......... the end result you shred the beef and you put on good rolls and dip in the juices--------- the kids have dubbed the juice "juice from heven";)

    Just in case you were wondering...lol :shock:

    I travel miles to get to a supermarket that has the tags on the meat packs written in English.
    Many a time I have picked up a pack of meat not knowing what it is, so to avoid buying the wrong "bits", once week ( or fortnight, depending on whats on), I head down to a supermarket in another emirate, and stack on on my Aussie and New Zealand meat .

    One easy recipe my kids love: Creamed chicken over biscuts. This is great for those "forgot to defrost something" days!

    One can chicken (or use leftover chicken if you have any; I will cook several whole chickens at once in my electric roaster when they're on sale, and debone/freeze the meat!)
    One can cream of chicken soup (or you can use a can of chicken gravy)

    Mix together and serve over biscuts. Quick, easy, and the kids eat it very well!


    Also, you can brown a pound of hamburger, and combine it with a can of Vegetable Beef soup. I learned this as "Campfire Stew", because it's easy to do over a campfire while camping.

    That's a great recipe Jackie....I have those days often so that's definitely a keeper for us!

    Porcupine meatballs: (rough estimates of ingredients, as I usually just toss things into bowls...sorry)

    500g beef mince
    1 carrot ( grated)
    1 onion ( finely chopped)
    a squeeze of tomato sauce ( or BBQ sauce)
    1/3 cup of uncooked rice
    1 tin of tomato soup
    dash of wostershire sauce
    1 tin of water ( use soup tin)

    Preheat oven 180 deg celsius

    Mix mince, onion, carrot, tomato sauce and rice together in a bowl.
    Roll into balls
    Place into casserole dish
    Cover with tin of soup, tin of water and wostershire sauce.

    Cover and cook approx 1 hour.

    Serve with mashed potatoes/pumpkin or rice.

    CHICKEN "not those" BALLS:

    500g chicken mince
    1/2 cup parsley ( chopped finely)
    1 small onion (grated or chopped very finely)
    40 g of breadcrumbs


    Preheat oven 180 deg celsius

    Coat oven tray with non-stick spray
    Combine mince, parsley & onion in a bowl.
    Roll into small balls ( makes about 18), then toss into the breadcrumbs.
    Place on tray and lightly coat with the cooking spray
    Bake for 15 - 20 mins or until golden & cooked through

    Serve hot or cold ( lovely with a salad and crusty bread)
    excellent cold for lunch.

    MEATBALLS & RISSONI

    500g beef mince
    1 litre liquid beef stock
    1 egg
    1 cup dried breadcrumbs
    2 tablespoons olive oil
    1 1/2 cups of rissoni pasta ( looks like rice)
    2 ripe tomatoes ( chopped)


    Combine mince with 1/2 cup of the stock, egg & breadcrumbs.
    Roll into meatballs.
    Heat oil in a pan.
    Place meatballs in pan, and ook until browned all over.
    Pour the remaining stock over meatballs, and cook, covered for 10 mins
    Add rissoni and tomatoes.
    Cook, stirring occasionally for about 8 mins or until rissoni cooked.

    * for variation, you can add things such as zucchini or peas etc at same time you add tomatoes *

    CHICKEN PIZZIOLA:

    4 skinless chicken breasts
    1/2 cup diced ham
    1/2 cup sliced mushrooms
    1/2 cup diced capsicum ( any colour)
    1/2 cup diced shallots/spring onions
    1/2 cup diced tomatoes
    1 teaspoon minced/crushed garlic
    1/2 teaspoon dried/fresh basil
    4 dessert spoons tomato paste
    1 cup grated cheese


    Preheat oven to 180 deg celsius
    In a bowl, mix ham, mushrooms, capsicum, shallots, tomato, garlic and basil.
    place chicken on a lined baking tray /dish
    spread tomato paste over the chicken
    spread mixed topping over chicken
    sprinkle with the cheese
    Bake for 40 - 60 mind ( depending on how thick the chicken is)

    PARSLEY & BACON PASTA

    300g pasta
    3 teaspoons minced garlic
    1 onion ( chopped)
    150 g mushrooms (chopped)
    3 rashers of bacon (chopped)
    150 ml evaporated milk
    3 tablespoons sweet chilli sauce
    40 g parmesan cheese ( grated)
    1/4 cup parsley (chopped)

    Cook pasta + drain
    Coat a pan with cooking spray and cook garlic, onion, bacon & mushrooms ( until onion soft)
    Add evaporated milk and chilli sauce to the pan.
    Stir in pasta .
    Mix through until pasta coated.
    Serve with parmesan id desired.

    ok, my favorite home meal, that i never take the time to make, lol, is ** drum roll please**

    fried chicken and potatoe salad

    yum yum, now i may have to make that next week. i still remember my mom frying it on a fri night, putting the pot salad together and then putting in fridge. then we would get up early and pack for the zoo. at lunch we would all go out to the car, throw out a blanket and eat cold chicken and potatoe salad. now i prefer it hot as an adult, but as a kid, when i was all hot and sweaty and hungry, it so hit the spot!!

    also, my grandmas ham and beans and cornbread, oh that was to die for! i loved it so much, and now im married to a man who doesnt like this meal, lol! oh the pain! i guess i need to just make it for myself.

    PANFRIED PORK & APPLES

    30 g butter
    1 tablespoon olive oil
    1 tablespoon plain flour
    4 pork butterfly steaks
    1 large green apple (sliced)
    2 teaspoons brown sugar
    1 tablespoon white wine vinegar
    1 tablespoon chives (chopped)

    Heat pan and add 1/2 of the butter & the oil.
    Toss pork in flour and add to pan
    Cook approx 3 mins each side.
    Stir through the vinegar.
    Remove pork and put in a serving dish.
    Pour over juices and keep warm
    Add remaining butter + sugar to pan, and stir until sugar dissolves
    Add apple and cook about 3 mins
    turn over once
    Add apples to pork & scatter the chives on.
    serve.

    ROAST LEMON CHICKEN

    2 large lemons
    2 tablespoon olive oil
    3 garlic cloves ( crushed) - or use minced garlic
    1 kilo of chicken ( wings, drumettes etc) ( I also used small chicken breasts)


    Preheat oven 200 deg celsius
    Put chicken in a roasting dish
    mix garlic, olive oil and juice of lemons in a bowl.
    Pour over the chicken
    Cook for 30 - 40 mins until chicken cooked

    Serve with chips/wedges and salad or with vegies.

    Chicken Tacos w/ the Fixings
    Meatball sandwiches
    Swedish Meatballs
    Chicken Tortilla Soup
    Chili
    Pasta Alfredo w/ Chicken and Broccoli
    Grilled Chicken & Asparagus
    Burgers, dogs, & the like.
    Mexican Lasagna
    Homemade Pizza (we use really thin whole wheat flatbreads for crusts)
    Hmmmm....

    More will come to mind...
