    ....okay, I have my standards that I do every year, Chocolate Chip, PB Blossoms, Ultimate Snickerdoodles and 7-layer bars.

    What I need is something new to try? What cookies do you do that I haven't already listed?

    I make snowmen cookies, mint checkerboards, chocolate cherry squares (bar cookies), sugar cookies, PB kisses, haystacks, and birds nests. I also make an apple cookie that is delish, and chocolate chip each year. We give tins of cookies to people for gifts.

    Let me know if any of these sound good and I'll post the recipe.

    Date Cookies Bake time: 7 minutes Temp: 350 degrees

    Dough:
    1 cup butter (or butter flavored Crisco)
    2 cup brown sugar, packed
    3 1/3 cup flour
    3 eggs
    ½ tsp. salt
    ½ tsp. baking soda

    Filling:
    1 pkg. dates, finely diced
    1 cup granulated sugar
    1 cup water
    1 cup chopped nuts


    Dough: Cream together butter/Crisco and brown sugar until fluffy, then add eggs. Sift together flour, salt and baking soda. Add to creamed mixture. Cover and set aside.

    Filling: In saucepan combine first three ingredients. Cook on moderate heat until a paste consistency, stirring constantly to prevent scorching . Set aside to cool. When cool add nuts.

    Roll out dough to 13” x 9” dimensions. Spread cool paste on dough, then roll up from 13” edge. Cover with saran wrap and place in refrigerator until firm, or overnight.

    Slice ¼ to 3/8 inch thick and bake at 350 degrees for 7 minutes. Cool on racks.

    These cookies don’t spread much, but leave a little space between them to allow air to circulate evenly.

    I don’t really like dates, but I love these cookies!

    Ok...recpies:

    Snowmen Cookies:
    1 package cream Cheese
    1 cup powdered sugar
    3/4 cup buter
    1/2 teaspoon vanilla
    2 1/4 cups flour
    1/2 teaspoon baking soda

    Mix first 4 ingredients until well blended add flour and baking soda mix well

    Shape dough into equal number of 1/2 and 1 inch balls place one small and one large ball per snowman overlapping slightly and flatten to 1/4 inch thick

    bake at 325 for 19 - 21 minutes until light golden brown. Dust with powdered sugar and decorate as desired.

    Peanut butter kisses...use any peanut butter cookie recipe (I use the mix) and roll into balls..then roll in sugar...bake about 7-10 minutes (until the cookie is almost done) then press in a peanut butter cup and finish baking.

    Mint checkerboards
    1 1/2 cup powdered sugar
    1 cup butter
    1/4 teaspoon peppermint extract
    1 egg
    2 2/3 cup flour
    1/4 teaspoon salt
    1/4 cup baking cocoa
    1 tablespoon milk
    1/4 cup miniature chocolate chips
    2 or 3 drops green food coloring

    Beat sugar, butter, extract and egg in bowl with electric mixer, stir in flour and salt
    Divide dough in half, stir cocoa and milk into 1 half and stir chocolate chips and food coloring in the other half

    Pat chocolate dough into rectangle 6x5 inches. Cut into 8 strips. repeat with the other dough. Place two strips of each color side by side alternating colors, top with two strips of each color alternating to create checkerboard that is 2 strips by 4 strips. Gently press together then wrap and refrigerate 2 hours.

    HEat oven to 375, cut rectangles into 1/4 inch slices bake 8 - 10 minutes.

    Chocolate cherry bars:


    * 1 cup (2 sticks) butter or margarine
    * 3/4 cup HERSHEY'S Cocoa or HERSHEY'S SPECIAL DARK Cocoa
    * 2 cups sugar
    * 4 eggs
    * 1-1/2 cups plus 1/3 cup all-purpose flour, divided
    * 1/3 cup chopped almonds
    * 1 can (14 oz.) sweetened condensed milk (not evaporated milk)
    * 1/2 teaspoon almond extract
    * 1 cup HERSHEY'S MINI KISSES Brand Milk Chocolates
    * 1 cup chopped maraschino cherries, drained


    Directions:
    1. Heat oven to 350°F. Generously grease 13x9x2-inch baking pan.

    2. Melt butter in large saucepan over low heat; stir in cocoa until smooth. Remove from heat. Add sugar, 3 eggs, 1-1/2 cups flour and almonds; mix well. Pour into prepared pan. Bake 20 minutes.

    3. Meanwhile, whisk together remaining 1 egg, remaining 1/3 cup flour, sweetened condensed milk and almond extract. Pour over baked layer; sprinkle chocolates and cherries over top. Return to oven.

    4. Bake 20 to 25 minutes or until set and edges are golden brown. Cool completely in pan on wire rack. Refrigerate until cold, 6 hours or overnight. Cut into bars. Cover; refrigerate leftover bars. About 48 bars.


    Haystacks:
    2 tbsp. peanut butter, creamy and crunchy
    6 oz. butterscotch morsels
    1 1/2 c. canned Chinese noodles
    1 c. cocktail peanuts

    Melt peanut butter and butterscotch morsels over low heat in medium saucepan. Stir in Chinese noodles and peanuts. Scoop out teaspoonfuls of hay stacks and place on cookie sheet covered with wax paper. Cool. Store in airtight container.

    Apple cookies:

    1/2 Cup shortening
    1 1/2 cup brown sugar
    1 egg
    2 cups sifted flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1/2 teaspoon allspice
    1/2 teaspoon nutmeg
    1/2 cup milk
    1 cup chopped peeled apples
    1 cup chopped nuts
    1 cup raisins (optional and I NEVER use them)

    Mix all ingredients and drop by teaspoonfull on greased cookie sheet. Bake at 375 for 12 - 15 minutes

    Sugar cookies I make from a Betty crocker mix....I just cut them out and let the kids decorate them with frosting and decorations.

    Birds nests are

    3 c. crispy rice cereal
    1 c. shredded coconut
    1/3 c. light corn syrup
    1/2 c. brown sugar
    3/4 c. peanut butter
    1 tsp. vanilla
    Jelly beans or Peanut M & M's

    Combine cereal and coconut in a bowl. In a saucepan, combine corn syrup, brown sugar, peanut butter and vanilla. Remove from heat. Stir in cereal mixture. Let cool, then shape into bird's nests. Then I fill them with jam or frosting! You could also add a couple of mini m&m's to make it look like "eggs"

    Seven Layer Bars

    3/4 Cup butter
    2 1/4 Cup grahm cracker crumbs
    1 1/2 Cups chocolate chips
    1 1/2 Cups butterscotch chips
    2 Cups coconut (this can be adjusted a little, we like coconut here)
    1 1/2 Cups sweetened condensed milk
    1 1/2 Cups chopped walnuts


    Preheat oven to 350.

    Place butter in a 13 X 9" pan and place in the oven for it to melt. Swirl and coat butter to cover the pan. Spread grahm cracker crumbs over the bottom of the pan and press into the butter. Layer chocolate chips over the crumbs, then butterscotch chips, then the nuts. Pour the sweetened condensed milk over the nuts - try to get as evenly as possible so that almost the entire top is covered (there will be "holes" but make sure they aren't more than a 1/4 inch or so). Sprinkle coconut evenly on top and slightly press into the condensed milk layer.

    Bake about 25 minutes or until the coconut is starting to turn golden brown and everything is melted. Let cool COMPLETELY before cutting into bars...and make them like 1" X 2" because these are so rich...this may take a while!

    I store mine in an airtight container in the fridge. I like how the cold makes everything hard and gives it a candy bar feel to it. They also freeze really well, so you could make a whole batch and freeze half for another time of year also.

    And for anyone who may want this one:
    Ultimate Snickerdoodles

    2 Sticks Butter (please, no substituting this!)
    1 1/2 Cups Sugar
    2 eggs
    2 3/4 Cups All Purpose Flour
    2 tsp Cream of Tartar
    1 tsp baking soda
    1/4 tsp salt
    2 Tbs PLUS 2 tsp Cinnamon (divided)
    2 Tbs. Sugar

    In a small bowl mix the 2 tsp Cinnamon and the 2 Tbs Sugar, set aside.

    In a bowl, lined with a sifter or sieve, place flour, cream of tartar, baking soda, salt and 2 Tbs Cinnamon. Set aside.

    In large mixing bowl, cream butter and sugar until light and fluffy. Add eggs 1 at a time, continue to beat. Scrape sides as necessary. Add flour mixture - 1 cup at a time to the butter mixture until well blended.

    Refridgerate dough for 30 minutes (or overnight works too).

    Preheat oven to 375.

    Form dough into walnut sized balls (I use a metal Tbs measuring spoon and scoop). Roll balls into sugar/cinnamon mixture, coating well. Place balls 2" apart on a cookie sheet. Bake about 10 mins until a golden brown. Remove and cool on rack.

    Note: they will puff at first when cooking, then flatten - this is normal.

    Sorry, I only listed the ones I didn't have yet. By all means list any recipes you want to share. I love to bake and am typing a few more out. When I have them done I will copy and paste them in here. I LOVE to exchange recipes. Do you want any of them that use a cake mix to start and then become cookies? I have them too.

    This is my family's favorite no-bake holiday treats:

    Reindeer Droppings

    1 pkg Oreos (finely crushed--food processor works best)
    1 pkg cream cheese
    white or chocolate almond bark (depends on if you want it to appear that you picked them up out of the snow or not ;) )

    Combine crushed Oreos and cream cheese. Form into balls. Dip in almond bark and let set. Freeze until ready to serve or refridgerate if you will be using them that day.

    I'm actually hosting a cookie party this Saturday night so that I can get different cookies from people ;)

    Everyone (including kids if they want to participate) bakes 6 dozen of 1 type of cookie and then we will set them out.....then each person will go through and take a certain # of cookies each round until all the cookies are gone.

    So far: I am making Pizelles (italian cookie)..... Alexis is making the peanut butter cup cookies..... Jake is making the Chocolate oatmeal no-bake cookies.... and then my foster kids are still deciding - they've never made cookies from scratch before so it should be fun.

    Brooke, I made the cookies with the crushed Oreos, cream cheese and almond bark last week and my kids loved them! I just wanted to add that the lady who told me about them said to make the mixture and put it in the freezer for 15 minutes before you roll them into balls. Mine turned out beautiful and were very pretty. I just used the white almond bark. Next time I am thinking about dipping them in white and then drizzling a few lines of chocolate on them just to make them fancy.

    I posted the recipe for haystacks but basically they are made from those fried chinese noodles and peanut butter and butterscotch chips. They are simple, require no baking and my children can make them with minimal help!

    Birbitt - thanks! I've had haystacks before, but a friend of mind calls them "Reindeer Droppings". LOL :D

    I did make oatmeal scotchies this morning. I don't usually make those.

    Hmmmmm....can't wait to EAT all these cookies!!!!

    We are doing a baking day for our "Girls day out" on the 22nd. Everyone is coming to my house to bake, watch a movie, and catch up with each other. They are all making the dough the evening before at their houses (enough for 8 dozen). Then bringing it and two cookie sheets when they come to my house the next day. There will be 7 of us, that allows us to keep two dozen of our own, plus all the variety of each of the others. Just in case the DH and kiddos get into the cookies before.

    With all the extra hands we can load the trays quickly, keep them in rotation and catch up on each others news. My family room is attached to my kitchen and has a big screen TV. If we run out of talk in goes the movie, lol.
