I'm trying to use up the random food I have in my pantry. You know, the stuff you buy and wonder, weeks later, what on Earth you were thinking? Yeah... that stuff. lol. Anyhow, I have to bring a dish to a Christmas party tomorrow and here's what I was thinking: Cambell's sweet red pepper soup (it's a carton of a puree soup) 1-2 cans of diced tomatoes 2 lbs of ground beef 1 pkg taco seasoning 1 pkg dry ranch brown rice Shredded Cheddar to top I'm going for like a taco soup type thing.. but really hearty. I don't usually make stuff up when I cook, and DH really hates anything remotely Mexican, so I'm looking for opinions as to whether or not this sounds the least bit good.
Ok, I feel better. lol. I can bake anyone's socks off, but cooking is not my forte. I always get nervous when I try to be creative.
I made this yesterday as planned. Couple of things.... I put everything but the rice in the crockpot on low for about three hours. I added the cooked rice literally as I was walking out the door. It took 30 min. to get to the destination and in that time, despite the fact that the rice was cooked, it soaked up ALL of the moisture left in the pot. I wasn't happy about that. It was too bland for me. Everyone said they liked it, but I like a stronger taste, I guess. So if I were to make this in the future, I'd add another package of taco seasoning and possibly another carton of the red pepper soup.
Amie, You might try a can of green chili also if you want it spicier. Or Jalapeno (for very spicy) I bet it would be good with potatos too, instead of rice. I love leftover/pantry cleaning sorts of meals. I made a turkey meatloaf...but, I was not all that thrilled with it. oh well. Ya win some, ya lose some.
