so, what have you stopped buying prepackaed or made and make your own now?

    Things like soups, sauces, noodles, breads, etc?

    I have recently got a kitchenaid mixer with a lot of attachments and one of which is a pasta roller and cutter. Ever since I have gotten that I make my own noodles now. My family loves them. I have been trying to make my own soups and sauces when possible. I make breads often, but still buy sandwich bread, since I cannot get my family to stray away from that. Oh, we also have been making our own waffles and freezing them.

    I am looking for more ideas on things, so what do you do?

    We make our own pancakes and sometimes dinner rolls. I love the idea of homemade noodles!
    ETA: Forgot that we make our own pasta sauce and babyfood.

    I make my own instant pudding mix it's so much cheaper and better than the prepackaged stuff. I also make my own baby food, and my own stocks from left over bones when I roast chicken/turkey/beef, and pasta sauce.

    Applesauce, apple butter, and strawberry jam. Ohio Mom also taught me how to can (after years of people telling me, "It's very easy! I do it all the time!", but that sure ddidn't help!), so now I don't buy canned beans, and this year I also did peaches. I also love to make soup...especially chicken noodle, or beef or venison vegetable!

    Like Jo Anna, I make my own bread, but still buy sandwich bread!

    cookies, brownies, and some cakes from scratch... soups...pancakes

    Chocolate Pudding Mix:
    Ingredients

    * 3 ounces Dutch-processed cocoa, approximately 1 cup
    * 2 ounces cornstarch, approximately 1/2 cup
    * 6 ounces confectioners' sugar, approximately 1 1/2 cups
    * 1 1/2 ounces instant non-fat dry milk, approximately 1/2 cup
    * 1 teaspoon salt

    Directions

    In a large bowl or plastic container with a lid, combine the cocoa, cornstarch, sugar, instant non-fat dry milk, and salt. Store in an airtight container in the refrigerator for up to 1 month.

    BTW...it stores in the freezer for up to 6 months!

    To mix up the pudding:
    1 3/4 cups Instant Chocolate Pudding Mix, recipe follows 2 cups milk 2 cups heavy cream 1 teaspoon vanilla... extract Directions Place 1 3/4 cups of dry pudding mix into a medium saucepan. Add milk and heavy cream and whisk to combine. Over medium heat, bring mixture to a boil, continuously whisking gently. Reduce heat to low and cook for 4 minutes while continuing to whisk. Remove from heat and stir in vanilla. Pour the mixture through a sieve and into individual dishes or a 1 1/2-quart serving dish. Cover the surface of the pudding with plastic wrap. Place in the refrigerator to chill completely before serving, approximately 4 hours.

    I make and freeze my own pizza rolls, egg rolls, Chinese dumplings, ravioli, pierogis.(all much more economical than store bought and easy to make)

    I make my own pasta sauces and pizza sauces. I also make my own pesto and hummus.

    I make and freeze pancakes and waffles. Pop them in the microwave or toaster oven for a quick breakfast.

    In the summer, I freeze fruit on sheet trays then store in ziplock bags. No need to buy frozen fruit during the winter.

    I can and freeze everything I can get my hands on.... Make bread, waffles, pancakes, noodles from scratch. I guess I have always done this but now with more kids it involves more canning and baking. It is really nice the girls love to help!

    Cool thread:)!

    We eat a lot of Mexican here, so I make my own taco and fajita seasoning. No MSG in our mixes. I also make my own pizza sauce and pizza dough. I make homemade granola bars, pancakes, and waffles too. Oldest DD has a milk allergy so I've learned how to make lots of things from scratch so she can enjoy eating too.

    I would love a decent noodle recipe. Every one I've tried turns out rubbery.

    Have you tried putting baking powder in your noodles? It makes them light and fluffy!!! They also rise some making them go further... Hope this helps.

    Here is a couple. ( I am assuming you already know how to mix it all and such so here are just the ingredients)

    These ones are out of my kitchenaid pasta roller/cutter book
    basic egg noodle
    4lg eggs
    1 TBSP water
    3 1/2 c sifted all purpose flour
    1/2 tsp salt

    semolina egg pasta
    4 lg eggs
    2 TBSP water
    1 TBSP oil
    3 1/2 c semolina flour
    1/2 tsp salt

    light wheat pasta
    2 1/2 c sifted whole wheat flour
    1 c sifted bread flour or unbleached flour
    4 lg eggs
    2 TBSP water
    1/2 tsp salt

    whole wheat pasta
    4 lg eggs
    2 TBSP water
    3 1/2 c whole wheat flour
    1/2 tsp salt

    spinach pasta
    1 pkg 10oz. frozen chopped spinach thawed
    1 TBSP water
    4 lg eggs
    4 c sifted all-purpose flour

    then I have a book called pasta - recipies & techniques
    There is tons in there
    I will give you a list and you let me know if you want me give you some of them

    Beet pasta
    Spinach pasta
    Mushroom pasta
    chili pasta
    buckwheat pasta
    whole-wheat pasta
    herb pasta
    saffron pasta
    tomato pasta

    And there basic egg pasta is
    2 1/2 c flour ( a little less if using unbleached all-purpose flour), plus extra to dust
    1/8 tsp salt (optional)
    3 lg eggs
    2 tsp veg oil (optional)

    I make a lot of my own things just because I prefer it that way. Ranch dressing, spaghetti sauce, soup stocks, soups, beans, pizza, dinner rolls and much more I'm sure. We buy a lot of Italian pasta at costco that's dried, but occasionally I make fresh pasta by rolling it out and using just a pizza cutter to cut it out. I keep swearing I'm going to get a ravioli tray to make my own but I haven't made it over to the kitchen store. It's just cheaper and sometimes more to my taste buds to make or create my own.

    Pasta, pierogi, pasta sauce, pizza dough, pizza sauce, pizza rolls, pizza, mozzerella bites, soups, stocks, jerky, apple sauce, apple butter, pancakes, waffles, breads, polenta, cakes, cookies, brownies, fudge, crepes, blintzes, etc. I make most of our food from scratch. Some of it, I make ahead & freeze - pancakes, waffles, pizza rolls, mozzerella bites, etc. I'm learning to can now, so I'll be canning some, too. Some things I prefer fresh, like pasta & pierogi, so I make them the day we eat them.

    I seriously feel like an inadequate cook. My mother never taught me to make anything... and she was a caterer! I only know how to make noodles because my Nunny (Italian grandmother) made fresh noodles for the week every Saturday. I wasn't in on the dough recipe, just the rolling and cutting.

    Of course, my feelings of inadequacy are also stemming from the fact that I watched Julie & Julia this weekend.

    I mix pizza sauce, shredded mozz, and whatever toppings we choose (diced) in a bowl. I then roll out pizza dough in a rectangular shape. I cut the dough into rectangles (about 1-1 1/4in long). Then, I put the filling on one end, fold the dough over, and seal it. It help to have your fingers slightly damp when sealing. If I'm freezing them, I freeze them on a cookie sheet lined with waxed paper or foil & put them into a bag once solid (so they don't stick together).
    The kids love to help make them & eat them. My nieces always ask if we can have homemade pizza rolls or homemade pizza when they come over. My kids & dh can barely stand to eat store bought pizza rolls now.

    How long and what temp. Brandi? I think I'll try those, but don't think I could make enough to freeze; my kids would eat them too fast! I tried Chciken Nuggets the other day, some for lunch and some to freeze, and they were ALL gone by the end of the day! The kids just kept snacking on them!

    Amie, my mom didn't teach me, either. I'm pretty much self-taught.
