St. Patricks day recipes

    I thought it would be fun to share some St. Patrick's Day Recipes, either Traditional, or just fun shamrock shaped food or green foods.:love:

    I've been baking our corned beef, I put 2 corned beefs (so we have left overs) in the pan and sprinkle with that little seasoning packet. I pour a can of chicken broth in the pan and cover with foil and bake about 3 hours in a 325 degree oven. Let them rest on a cutting board covered with foil then slice thin.


    I also boil chopped cabbage with water, a spoon full of sugar and a pinch of salt and red pepper flakes. Cover and boil until tender.

    I serve boiled potatoes and gravy ------ I make enough gravy to cover the meat too if anyone likes to do that.

    Is that really how you make a corned beef??? I've been wanting to buy one, but totally afraid of messing it up!!! My youngest's birthday is on St. Patty's day. I was thinking of making corned beef hash & eggs for her birthday. I usually buy premade corned beef...trying to decide if I'm brave enough to try.....

    I made hash with left over corned beef but the first day oh man you've got to just have a few slices!

    Oh and you need to spend a little extra and get the flat cut.....the point cut I think is tougher.

    St. Patty's day is the anniversary of our first day. We usually go out to dinner but this year I will be at my mother's for a visit and he will be here.

    I make my cabbage the same way only I fry some bacon while the cabbage boils, then chop it up and put it in the cabbage pot drippings and all. I even take a cabbage leaf our and scrap the bacon pan with it to get all the bacon flavor into the cabbage. It is so good. I make all my greens like that.

    Did you know you can fry cabbage?? Fry some bacon (3 - 4 pieces per head of cabbage) remove it from the pan but leave the grease. Then cook the cabbage in the bacon grease and ad a little sugar. I can't say how long to cook it - you just gotta know when it's right. Then put the chopped bacon pieces back in and cook for anothe rminute or two. Yummy southern dish.

    I'm planning on making Irish Stew and Irish Soda Bread. I have a gingerbread man cookie cutter, so I'm going to make green Leprechaun cookies. My youngest son said we should leave out some cookies for St. Patrick! How adorable!

    well I do my cornbeef different instead of putting in oven I put my in slow cooker and let it go all day long. I love corn beef. I am Irish. Cabbage. I fry it in butter on the stove.
    Serve with red potatos and butter. love it..

    Ok I have never had corn beef. Now I want to try some! Kris I didn't know you were Irish.

    THis is from the Taste of Home Irish food cookbook put out this year (which is the same as last year's I believe)

    Corned Beef and Cabbage (Crockpot)
    1 Medium onion, cut into wedges
    4 large red potatoes, quartered
    1 pound baby carrots
    3 C. water
    3 garlic cloves, minced,
    1 bay leaf
    2 T. sugar
    2 T. cider vinegar
    1/2 t. pepper
    1 corned beef brisket with spice packet (2 1/2- 3 pounds) cut in half
    1 small head cabbage, cut into wedges

    Place the onion, Potatoes and carrots in a 5 qt. slow cooker, combine the water, garlic, bay leaf, sugar, vinegar, pepper and contents of spice packet, pour over vegetables, Top with brisket and cabbage, Cover and cook on low for 8-9 hours or until meat and vegetables are tender, Remove bay leaf before serving. Serves 6-8 (unless you really like corned beef ;) )

    If you don't like or are too chicken to have corned beef

    Caraway beef roast (not corned)

    1 Beef rump or chuck roast (3 pounds)
    3 T. vegetable oil
    1 C. hot water
    1 1/2 t. beef bouilon granules
    1/4 C. ketchup
    1 T. dried minced onion
    1 T. Wocestershire sauce
    2 t. caraway seeds
    1 t. salt
    1/2 t. pepper
    2 bay leaves
    2 T. all pourpose flour
    1/4 c. water
    Cooked potatoes and carrots, optional

    In a Dutch oven over medium heat brown roast in oil on all sides, drain
    In a small bowl, combine the hot water and bouillon add the ketchup onion, worcestershire sauce caraway, salt and pepper pour over roast Add bay leaves cove and bake at 325 for 3 hours or until tender remove roast to serving plater to keep warm. In a small bowl combine flour and water until smoooth stir into pan juices bringto a boil cook and stir for 1-2 minutes or until or until thickened adding additional water if neccessary discard bay leaves. Serve with cooked potatoe and crrots if desired yield 12 servings.

    yepper I am Irish and proud of it..

    Aball, I don't use all that stuff, most corn beefs come with a package of season just open it up and add alittle water to the bottom of the cooker and let it go.

    Irish soda bread
    1 package active dry yeast
    1/2 C. warm water
    3 T. sugar, divided
    1 C. warm buttermilk
    2 T. butter, softened
    1/2 t. salt
    1/2 t. baking soda
    3 1/2 to 4 cups all pourpose flour
    3/4 C. golden raisins.

    In a large mixing bowl, disolve yeast in awarm water. Add 1 T. sugar, let stand for 5 minutes Beat in the butter milk, butter, salt, baking soda, 1 C. flour and remaining sugar until smooth, Stir in raisins nd enough remaining flour to form a soft dough. Turn onto a floured surface, knead until smooth and elastic, about 6-8 minutes, place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled in size. about 40 minutes. Punch dough down, Turn onto a lightly floured surface knead for 2 minutes shape into a round loaf Place on a greased baking sheet. With a sharp knife, cut a 1/4 inch deep cross on top of loaf. Cover and let rise until doublesd about 30 minutes Bake at 350 for 30-35 minutes or until golden brown. Remove from pan to cool on a wire rack.
    (I have made this kind of bread with other recipes that are not this labor intensive and they were good too)

    Yes Kris, I would too....... but truth be told I have 3 coppies of this little cookbook (one from last year, and one I bought this year because I don't know where the other one was, and the other day I got one from my secret sister....... so I just wanted to share some recipes):roll:

    Oh Amy, that is fine, just that sometimes I have to laugh at cook books they ask for everything even the kitchen sink. I like to cook simple... always have.

    Like Kris, I cook my corned beef all day in the crock pot or slow roaster. We aren't big on cabbage here, so I'll do one or two other veggies instead. We'll have red taters, and I'll probably make some Irish Soda Bread. I might make my Irish Cream pie again this year. That was a big hit last time.

    I just entered 3 of my recipes in the monthly recipe contest for lets dish. (the heinz panel I am on) I did corned beef------ put that one on yesterday and its still the only one for corned beef, cabbage and lime pie (no bake kind with sweetened conndensed milk)

    kraftfoods.com has an easy Irish Soda Bread that I have made a few times now without any problems and it is yummy!

    We always do our cabbage like that, only without sugar. Sometimes we put a little chopped onion in with it. The only corned beef we get around here is in a can. We'll dump a couple of cans in with the almost-done cabbage, then have that with mashed potatoes and cornbread.
