We aren't vegetarian, but my dd11 eats a vegetarian diet just before and during swim meet days (meat takes a long time to digest & slows swimmers down). She has her first all-weekend meet this weekend, and we need some suggestions for meals. We usually do cheese ravioli or mac 'n cheese with black beans. She needs carbs and protein- not super light foods. Any suggestions?
She can add whey protien powder to lots of things (I even put it in my cereal). Whey is bettr than soy because soy turns into an estrogen simulator and can really screw with a woman's hormones. A lot of friends who are vegetarians talk about this site http://www.vegetariantimes.com/recipes/ They love it. So hopefully that will help.
I'm a vegetarian and have been my whole life. I just eat what most people eat minus the meat. Pasta with sauce and cheese and bread would be a great carb heavy meal. Pasta has protein in it too. Add cheese and a glass a milk and you are all set
Thanks, Embassy and Actressdancer. I was thinking bean and cheese breakfast tacos for breakfast and a PB sandwich with string cheese and fruit for lunch, but am kind of stumped on what to pack for a supper meal (maybe a pasta salad w/beans that can be kept cold?) The meet this weekend is 9-10 hours long on each day, so I have to take stuff for all day. There is usually a limited concession stand, but it's costly! We do granola bars and trail mix between events. Oh, and does anyone have a good hummus recipe? I love roasted red pepper hummus, but don't know how to make it!
I love hummus! I make mine with a can of chick peas drained, a clove of garlic, about 2 teaspoons of lemon juice, salt, pepper, and about 1/2 cup of plain yogurt. I mix it until smooth in the food processor. I don't measure when I make it but I listed what I typically do. It would be great with toasted pita triangles and veggies.
That's basically what I do, too.. Only I usually end up with two cloves of garlic because, well, I'm Italian. lol.
Apple slices spread with peanut butter or almond butter makes a quick snack. Can she have boiled eggs? Congratulations, and let us know how she does!
I have not much thoughts on this except a good fruit salad, fruit smoothy and we love cucumbers marinatd in vinegar. (sprinkle a little sugar) I love snacking on frosted mini wheats.. Bananas are good for no cramps! what about pizza with vegetables.
Fruit salad is a good idea, Amy! She can eat eggs, though she's not a big fan of them. She just avoids meat, not all animal products. Thanks for the Congrats, P.H. This is the Junior Olympics meet. She's ranked pretty much right in the middle, so there probably won't be any medals for her. It's a great experience, though.
Pam, I really don't have any ideas but want to wish her luck this week end. Sounds like you are getting alot of wonderful ideas. I know my buddy Deena might have some.. What about lunchables pizza ones.
are you looking for things to take to the swim meets?? Peanut butter and crackers cheese and crackers tortillas with cream cheese and dried rasins or craisins, toasted coconut, pecan pieces, carrots and ranch blue berry muffins granola and yogurt
Something to eat the day before and to take to the meets. Those are good ideas for snacks. She'll have to eat 2 meals and snacks at the meet both Sat. and Sun.
I've been thinking about your exciting, fun weekend! I prayed that your dd would have plenty of energy and would do her best and that it would be a great family time for all of you. Another quick, nutritious snack is a package of frozen peas. Cut the top off the package before you go, secure it shut with a clip-on clamp, and take a spoon. Peas are delicious raw, either frozen or thawed.
Nuts and dried fruit make a great veggie snack. There's a wonderful Mac & "Cheese" recipe in Country Life that has no dairy and has great nutrition and flavor. It includes cashew butter or tahini, frozen peas, nutritional yeast, and pimentos along with other flavoring. We serve it with a side of dark green vegetables, fresh and organic if possible.
It went well. Short course (width of the pool) season is over and we are into long course (length of the pool) now.
I wish I had started reading this earlier. I have 2 swimmers in our family. It is an incredibly time consuming sport and I worry about keeping enough calories in my girls. The USASwimming magazine has some good recipes in it. We like hummus also. I have found my homemade fried rice is a a good carb loading meat for before meets. We just add more eggs for protein. My girls like yogurt smoothies. I am not really keen on the additives in some of them, but for during meets the Activia ones are good. They are much easier than plain yogurt to manage.
Here's a recipe for Esau's Pottage. Supposedly it's the stew Jacob made when he Esau sold him his birthright. We made it when we were studying Jacob and Esau in history, and it's very good. http://www.recipesource.com/special-diets/vegetarian/03/rec0311.html
We run into this with gymnastics too! My daughter takes little portable tubs of peanut butter with her to eat after a meet! LOL Hummus is a great one. My daughter won't eat cheese, so for me, all the cheese stuff is out! I hate that! Wish I could get her to eat it. Won't eat yogurt either. I will try some of these ideas. I will say, the best meet she had, she ate a grilled chicken caesar salad before it.
