Anyone have any good crock pot recipes?

    With the school year starting back up and the kids activities being mostly in the evenings, I need some good recipes for my crock pot. We can only do so many breakfasts for dinner and pizza nights, you know?

    I never measure what I put in the crockpot, but I will put a nice pot roast in the crock pot with chopped onions and carrots, some beef boullion and water and then in the last 30 minutes I add some lentils or split peas and cook till they are tender and then shred the meat and serve over rice. My kids love that one.

    When my celery gets bendy, I'll make stew. I'll chop up all of the celery, then chop a few onions, a few potatoes and carrots (if I have them). I'll add any other "about to expire" veggies... sometimes I'll add a handful of rice, barley, or even some beans. Basically I just fill the crockpot up until it's almost full and cover everything with water. Once everything is soft, I'll add a heaping tablespoon of veggie base and salt to taste.

    Mexican Dump Soup

    1 can black beans, drained
    1 16 oz Jar Salsa (choose your heat level)
    1 can whole kernel corn, drained
    1 can low sodium chicken broth
    1 8 oz can tomato sauce
    1 cup tortilla chips - crushed

    place everything in your crockpot and cook on low about 5 hours. Serve with cheese and sour cream and more crushed tortilla chips. Add cooked, cubed chicken before serving, too. Make it more hearty. :)

    Cheesy Chicken
    1 can cream of chicken soup
    1 can cheddar cheese soup
    Boneless chicken breast

    Put all in the crock pot and cook on low 5 to 6 hours, serve over rice or egg noodles. you can also add vegetables in the last hour or so. The kids love this.

    Other times I'll just put chicken in the crock pot with a jar of gravy, or a jar of BBQ sauce, cut up some potatos and throw them in too. Yummy!

    I usually do like DawnEtech does: I put a piece of meat in (chicken or beef) then cover with BBQ sauce or gravy. Super easy.

    Make BBQ pork (pulled pork) with some pork chops and BBQ sauce for 4-6 hours. Shred when cooked. Eat on bread or buns. Addictive!

    The other thing I do is with Tri-tip when its on sale. Brown it somewhat in a pan. Pour some soy sauce in the crock, some water and rub minced garlic and pepper over the meat. Cook for 6-8 hours. Its wonderful.

    One of our favorite's is:

    Country Sytly ribs and bbq sauce. That's it! cook for about 4 hours

    I cook in my crock pot everyday done it for 14 days straight and love it. I put everything in the crock pot.. its wonderful love my crockpot.

    Also another variation for the roast is to mix together a can of cream of mushroom soup, a packet of beefy onion soup mix and a jar of beef gravy. Pour over the roast and cook. Makes a gravy so yummy!!!

    I also do beef stew in mine. I brown the beef tips on the stove top with a little EVOO and onions, then add to the crock pot with a can of diced tomatoes, chopped potatoes & carrots and top it off with beef stock (or broth). You can also get beef stew seasoning pack with all the other seasoning packs (chili, taco, etc.) that you can add to give a little more flavor.

    You can also do chili when the weather cools off a bit. (You can eat it when it's hot but our family prefers it during cold weather more than in the HOT Mississippi summer) I just brown my meat along with some onion & bell pepper then add the chili beans, tomatoes & chili seasoning. Put it in the crock pot and cook until you're ready to enjoy.

    DITTO! I usually make "Pulled Chicken" lol. Whe we have chicken in the freezer we thaw it, cover the bottom of the crock w/ a little water, and layer the chicken in it. Each layer add some BBQ sauce and seasoning. Cook on low all day (I start it at about 11AM for dinner time.) and take the chicken out, shred, and mix w/ BBQ sauce. It's really good!:cool:

    I cut up chicken breasts and toss them in with homemade BBQ sauce, a large, sliced, red onion, and a can off chunked pineapple sauce. I sometimes add some bell peppers with it. It is FABULOUS and also makes great sandwiches if you want to shred it.

    I forgot to add that I also add minced garlic.

    Love my crock pot.

    I like to do 'double duty' meals in it. Roast with veggies one night, bbq with the left over roast the next. or veggie soup (cause you just made your own stock the 1st night!)

    We have lots of favs....I need to start blogging about them!

    Let's see.

    chicken noodle soup (don't add the noodles until near the end or it'll be too soggy) I put chicken, carrots, celery and onion in the crock pot with water. Then I add, salt, peppercorns, a couple of bay leaves, thyme, chives, basil, garlic powder, celery seed, onion powder and some 'poultry seasoning' (which is mostly sage)

    Spaghetti Sauce this is a stove top version-but you can easily dump it all in a crock pot instead-I often do, I was just doing it on the stove the day I blogged it...

    This one was AWESOME (but the peppers make it a bit pricey)

    This one can also be done in the crock pot. Just, like with the soup, add the noodles in toward the end or they will be too mushy.

    Sonita, I found that with noodles, you need to boil them before adding them. If you put them in raw, they turn to mush.

    Here is a great crock pot recipe that I love:

    Black Bean Chicken Dip

    1 can black beans
    1 small bag frozen corn
    1 cup salsa
    S & P to taste
    few shakes of garlic powder
    few shakes of cumin powder

    Mix all together and place in crock pot.

    Add two raw chicken breasts on top of mixture.
    Pour an addditional 1/2 cup of salsa over the chicken.
    Cook on high 4 hours, or until meat is cooked through.
    Remove chicken, shread, return to crock.
    Place one package cream cheese over mixture until it's all melted.
    Mix together.
    Taste with chips (add more seasoning as needed).

    Serve with tortilla chips.

    So very yummy! I've made it with and without chicken. Adding the chicken in makes it more of a meal. You could also easily use canned chicken or even some rotisserie meat pulled off the bones.

    Mine don't-but I add them in at the very end-like 30ish minutes before serving depending on the type of noodle I'm adding, some types take a few more minutes than others...if I add them at the end-they aren't mushy.

    I learned real quick dumping noodles into a crock pot in the morning is bad, bad thing LOL
