Brussel Sprouts

    I am looking for recipes for brussel sprouts. They have been in our bountiful baskets 2 weeks in a row now. I have read many recommendations to roast with olive oil, salt, and pepper. It was not received well in my house :roll: . I was going to try cooking them with bacon this week unless I get a fantastic recipe from someone.

    Sounds like your family needs them altered so they don't taste so much like brussel sprouts. I think you bacon idea is a good one. My only other suggestion would be a cheese sauce preferably made with Swiss Cheese. Cheese makes everything better!

    brussel sprouts can be sliced thinly and used in place of cabbage to make cole slaw. I personally like them sliced thin and cooked with garlic, onion, salt, pepper, and butter until they are well carmelized, it brings out the sweetness of the sprouts. :)

    Thank you ladies, both great ideas. I may just combine both methods. I don't know why I hadn't thought of cheese, we love cheese on everything.

    I LOVE them!!! But my family only tolerates them for the nutritional value. I have boiled them and then pureed them to add to cream based soups. I used them in place or spinach for a bisque once. They actually had a mild flavor when combined with the cheesiness of the soup.

    Maybe I am just lucky but my kids will eat them just steamed or boiled with a bit of butter....then again I have yet to find a veggie they don't like.

    I would recommend a cheese sauce...mmmm...makes me want some right now.

    I did them with bacon a while back and they were awesome. My dad hates brussel sprouts, and he even like them this way!

    Cut the brussel sprouts in half
    Cook your bacon then remove the meat
    Reserve 2-4 tbsp of the grease in the skillet (depending on how many sprouts you have)
    Toss the sprouts into the grease and cook until they begin to caramelize
    Mix the bacon back in and spread on a cookie sheet
    Bake at 400 until tender (10 minutes or so??)

    They really are quite yummy!

    ETA: I've heard of tossing some walnuts, mushrooms, onions, etc into the mix as well

    We have Brussels sprouts as part of our Christmas dinner every year. The kids absolutely love this recipe, and beg for them throughout the year.

    Nutty Brussels Sprouts

    Ingredients
    3 cups Brussels sprouts
    3 tablespoons sherry vinegar
    3 tablespoons maple syrup or honey
    1 tablespoon minced shallots
    2 teaspoons Dijon mustard
    1/3 cup walnut oil
    Salt
    Freshly ground black pepper
    3/4 cup chopped walnuts or pecans

    Directions:
    Trim any damaged leaves off the Brussels sprouts and trim the stem ends. Cut an X in the bottom of each sprout, then steam the sprouts in a vegetable steamer until crisp-tender.

    In a medium mixing bowl combine the vinegar, maple syrup, shallots and mustard and whisk together. Let sit for 5 minutes. Whisk in the oil in a slow, steady stream until emulsified. Add salt and pepper, to taste.

    When the Brussels sprouts are steamed to desired doneness, toss with the vinaigrette and walnuts and serve immediately.

    We steam ours. It brings out the natural sweetness.
