Hey all! We have been making spagetti sauce and freezing it as we know nothing about canning. BUT I got a granite wear canning pot with a thing inside to hold the jars, but I have no other tools. What else do I need to can? I know I can only do acidic things in the hot water bath, but we have plenty of tomatoes, so I want to can them! Also, are there any good websites for canning? Please help!! Edie

I love the pick your own site. They will list all the tools you need, too. I've been canning tomatoes all day myself.
Now remember with the tomatoes that unless you add more acid to it like lime or lemon juice or vinegar you need to pressure can them. I guess the tomatoes today have less acid than they did 20 years ago. I never do anything besides hot pack my tomatoes (unless I add meat to the sauce), and I've had only one can go bad in several years. I don't add acid either. Maybe that's not up to today's safety standards, but it works for me!
