I'm looking for a recipe that uses artichokes. But I want it to be a main dish. I love artichoke dips and spreads and bruschetta and all, but I'm looking for a recipe that uses artichokes in a main dish. One more catch. I only cook vegetarian. Any suggestions?

Sauté the hearts in garlic and olive oil, add pasta and toss. Place in a baking dish and top with mozzarella...broil for a couple minutes until the cheese is bubbly.

Ooh. That sounds good. Do you think I could use jarred artichokes? I've done fresh artichokes in the past but they can take quite a while to prepare.
