Enjoying the summer bounty from our garden :)

    Our garden is finally in full swing ! For the 1st time ever I made homeade salsa today from peppers , tomatoes & onions from the garden. I wished I had cilantro to add to it though... ours has already bolted. If I would have known it was so easy to make I would have been making it years ago ! Last week I had 12 pounds of squash so I made some zucchini bread with shredded carrot and apple. First time I added the apple and it was so tasty.
    I am licking my chops watching all our tomatoes slowly ripen.... I can't wait for the first ripe green zebra or orange beefsteak.
    I am at a loss for creative uses for bush beans. I planted WAY TO MUCH --- 6 plants . I planted 3 yellow wax and 3 dragon tongue. I over planted thinking that some would die but that wasn't the case. Does anyone have any yummy recipes that they use bush beans or fresh green beans in?

    Anyone want to share how you use up the excess produce from your garden? I am always looking for ideas so the food doesn't go to waste.

    Wonderful!

    Our life has been so busy and complicated this summer that our garden looks like a giant weed-lot. Add in lack of rain and I doubt we'll get much from the garden this year. Dh and I don't have time to pick what is ready either.

    I got some peppers from one son-in-law this weekend to make pepper sauce... they are still sitting in the bag.

    You could always can the beans or freeze them for later this winter...

    Yep, I'd can them. If you don't can, you can always freeze them.
