Uh huh, yeah...you heard that right. :lol: I have to share this recipe. My oldest daughter found it somewhere. It's so easy and sooooo good. Chicken Wild Rice Soup: 1 lb boneless skinless chicken thighs, cut into 1 inch pieces 1/2 cup uncooked wild rice 1/4 cup chopped onions 2 cans condensed cream of potato soup 1 can chicken broth 1/4 tsp garlic powder 2 cups sliced carrots 1 cup half and half Add chicken to the crock pot. In a bowl combine wild rice, onions, potato soups, chicken broth, and carrots. Stir and pour over chicken. Cover and cook low for 7 - 8 hours. Add the half and half and turn up to high for 15 - 30 minutes. I change this a little...I use boneless skinless chicken breasts. I just put a few on the bottom of the crock pot still frozen. Later after the chicken is cooked I just take them out, cut them up, and put them back in the soup. I also use 99% fat free chicken broth, and fat free half and half...but do what you want. I actually doubled this recipe this time. It filled my oval crock pot. It does thicken quite a bit after it cools off, but when I reheat it I just add a little bit of milk. I hope if you try it you'll like it.
