Artichokes and egg plants??

    Bountiful baskets gave us some new stuff to try this week.. Never had an artichoke OR an eggplant. How do you cook them ? What dishes can you make with them? I don't want anything to go to waste!!

    For eggplant, you can make mini eggplant pizzas. Slice them, add a bit of pizza sauce, mozzarella cheese, and whatever other toppings you like. We put bacon pieces on ours. Bake them at 350 until the eggplant is soft. All 4 of my kids like them.

    The artichoke is a hard one. I once got one as part of a produce co-op. I just used the heart to make a dip, but it was a lot of work!

    LOVE eggplant-

    if you want to take some time, eggplant Parmesan is awesome. If you want quick and easy and your family likes hummus, try babaganoush. (roast the eggplant in the oven, put in blender with garlic, onion, etc).

    Artichoke-take out the center (you kind of twist and turn) click the sharp ends off the leaves brush with oil and butter, and roast..pull off leaves and dip in butter and eat.... you can probably youtube both.

    Artichokes we don't like much.. :/ Got eggplant parmesan in the oven now.. Can't WAIT to eat it!!

    Since you don't like artichokes, make sure to trade them next time they have them. I agree it is horrible to waste produce if your family truly dislikes it. We do not do kale at my house, but it is another hot item to most, so I either give it away or trade if someone offers me something out of their basket they do not like. Even if I get nothing in trade, I at least know it will not go to waste.

    Oh we LOVE kale!! YUMMMMY! I will definitely make sure to give/trade the artichokes the next time. This was the first time we ever had them and weren't real thrilled with them, but the next time I'll know. The eggplant parmesan was very good! Will definitely be eating it more often. One of the perks of bountiful baskets is getting fruit and veggies you don't normally buy and trying them by getting creative with new recipes.. I've cooked a new recipe every night this week because of the baskets. My family is very happy. LOL.
