Healthy Cheap Meals

    I am trying desperately to cut back our grocery budget. I already shop mostly at Aldi (sometimes Meijer or Kroger if I can't get it at Aldi). I do have to buy organic milk and beef for health reasons. I don't buy much processed food as it is. I'm looking for low cost ideas and especially healthy dinner ideas. Help! :D

    Anything with dried beans and lentils! We buy organic milk and when we can purchase a quarter cow from a farm and have it shipped here. So when a recipe calls for ham burger, I split it with some dried beans. When I have time I also make as much as possible from scratch, bread, etc. And make my own seasonings from buying the spices. I like recipes from heavenly homemakers and money saving mom. ;)

    I also forgot to mention I like miserly moms.com and her books. If you live somewhere where you can grow your own food that helps too. I don't really. But I did regrow lettuce and green onions, to some extent. Put them in water and sun and they grow, but about 25% regrow th . Anyways, good luck!

    I have also recently "discovered" dried chick peas (garbanzo beans). I had always bought them canned, so would pass in favor of cheaper dried beans. I ordered some and was VERY happy to learn you don't have to soak them like other beans. They cook in about the same time as lentils. We eat them as salad and hummus, and another homeschooling mom I know cooks them partway, puts them in the food processor, and then uses them as a ground meat substitute. She says it works great, and I plant to give it a try.
