Apple Bread

    I have a recipe for Apple Chunk Bread. It's very good, only it's a bread machine recipe. Does anyone have a similar recipe that does NOT require a bread machine? Or does anyone have any idea the temp and time if I were to do it in an oven?

    Syele, thank you so much!!! I will give it a try and see how it turns out!!! It really is great bread!!! The kids and I went apple picking Tuesday, and got 3 bushels of Jonagolds! Only trouble is, they get real watery when you try to fry them. But they're good anyway, and the applesauce is turning out very good!

    Praline Apple Bread

    1 c granulated sugar
    1 8 ounce carton dairy sour cream
    2 eggs
    2 tsp vanilla
    2 c all-purpose flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1-1/4 cups chopped, peeled tart apples
    1 c chopped pecans
    1/4 c butter or margarine
    1/4 c packed brown sugar

    In A large mixing bowl beat together granulated sugar, sour cream, eggs, and vanilla on low speed of an electric mixer till combined, then beat on medium speed for 2 minutes.

    Stir together flour, baking powder, baking soda, and salt; add to sour cream mixture, beating on low speed till combined. Stir in apple and 1/2 c of the pecans. Turn into a greased 9x5x3-inch loaf pan. Sprinkle with remaining chopped pecans; press lightly into batter.

    Bake in a 350ยบ oven for 55-60 minutes or till a toothpick inserted in center comes out clean. (If necessary, cover loosely with foil the last 10 minutes of baking to prevent over-browning.) Coo, in pan on a wire rack for 10 minutes.

    Meanwhile, in a small saucepan combine butter or margarine and brown sugar; cook and stir till mixture comes to a boil. Reduce heat and boil gently for 1 minute. Remove bread from pan. Drizzle top with brown sugar mixture; cool. Makes 1 loaf (18 servings)

    :D I have never heard of apple bread but it sounds good. I am going to try it :)

    Here is the recipe I use, from my Betty Crocker cookbook. If you've ever had the Apple cake mix from Tastefully Simple, it tastes identical.

    Apple Bread
    1 1/2 cups all-purpose flour
    1 teaspoon ground cinnamon
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/4 teaspoon baking powder
    1/4 teaspoon ground nutmeg
    1 beaten egg
    1 cup sugar
    1 1/2 cups finely shredded, peeled apple (I use apple chunks)
    1/4 cup cooking oil
    1/2 cup chopped walnuts or pecans (I leave these out)

    1. Grease the bottom and 1/2" up sides of a 8x4x2" loaf pan; set aside. In a medium bowl combine flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Make a well in center of flour mixture; set aside.

    2. In another medium bowl combine egg, sugar, apple, and oil. Add apple mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon into prepared pan.

    3. Bake in a 350* oven for 50-55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completelye on a wire rack.

    ** You can also substitute the apple for 1 cup finely shredded, unpeeled zucchini

    I used to make this all the time. It is from my 1959 Farm Jounal Country Cookbook. A mennonite friend of mine used to make this to deliver to friends.

    Fresh Apple Bread

    "Oranges and apples get together in this California loaf. Excellent with cheese sandwiches"

    2 C sifted flour
    1 t baking powder
    1/2 t baking soda
    1/2 t salt
    1/3 c shortening
    1 C sugar
    1 egg
    1/3 c orange juice
    3/4 c raisins
    1/4 c chopped nuts
    1 c finely chopped apples
    1 T grated orange rind

    Sift flour, baking powder, soda and salt.
    Cream shortening; add sugar gradually. Add egg; beat thoroughly.
    Add dry ingredients and orange juice alternately to creamed mixture;blend well after each addition. Add remaining ingredients; mix well.
    Pour into 3 well greased No. 2 - tin cans. Bake in a moderate oven(350) 45 minutes. Makes 3 loaves.

    I always made it in 2 loaf pans.

    These all sound really good! I just got a bushel of apples yesterday so I'll be trying a couple of these!

    Jackie, would you share your bread machine recipe? I bought a barely-used one at a garage sale a few weeks ago! The apple bread sounds yummy. Thanks!

    What size loaf do you make? I tried to put the recipe on, but I couldn't get it to look right, because I tried to give the measurements for a small, medium, and large size loaf. But if you tell me which you want, I'll post it!
