For you vegetarians:

    I'm not a vegetarian, but ds9 is becoming more and more of a vegetarian. He refuses to eat beef, including spaghetti and meatballs, hamburgers (even from McDonalds), and the dreaded meatloaf, lol.

    I'm okay with this, except he hates veggies except green beans. I'm not forcing him to eat beef, but we do have it on the menu about twice a week. I was hoping perhaps on those nights I could make a vegetarian dish for him on these nights.

    He will eat chicken and pork and stuff, it's just beef. (Though he's starting to cut back on chicken, too.) But I don't want to make a meatloaf and chicken fingers all on the same night, lol.

    This would also help us cut back on meat (which would help us with our grocery budget and our health. . .we eat a lot of meat.) I should also input here that no one in this house really likes fish. :roll:

    I read in some of the other threads that some of you are vegetarians, so I'd be grateful for any help you can give me with recipes.

    When I get the time I will try to send some to you. Otherwise google 'vegetarian recipes' and you will find several sites.

    Tell your son part of being vegetarian is eating those vege...tables;)

    Does he eat refried beans? There are alot of great Mexican dishes. Can you make spaghetti and just not put meat in his sauce. I do things like that. Make the same dish for everyone but always add the meat to whatever dish it is, last. You can make just about everything the same with all the meat dishes by adding it last. If you make lasagna then make a small separate pan for his layer everything as you are just don't add the meat. Same with chili, make one smaller pot and don't put the meat in it.

    Lentils are a great replacement for meat .HAve tried those ? I soak mine first with a little lemon juice and then use them . I suggest you saute onions ,add diced zuccini ,tomatoe and the lentils .A sprinkle of Italian herb mix is good too.If the lentils have been pre soaked (I do them overnight for a breakfast meal) ,this is done quite quickly.Season to your taste and serve over wholemeal pasta or brown rice .You can do the same type of thing using tofu and/or pumpkin too with the zuccini and tomatoes.

    Thanks so much, guys. I guess because I'm not a vegetarian it is hard for me to even think about "how", lol.

    I don't know of any good ideas for him but wanted to ask if any of you who are vegetarians eat McDonald's french fries? Babyboy and his mom don't eat any meat at all and it makes his mom sick if she accidentally gets any meat at all in something. Lately she had been wondering why she kept having stomach problems and one of her friend noticed a McD's bag in her car. Her friend said McD's french fries are not vegetarian. Babyboy's mom didn't believe it and called McD's offices and they confirmed that the frozen french fries are dipped into something beef based to give them a better flavor. So now if I take Babyboy to McD's he gets a cheeseburger with no meat. I can't do that because he loves french fries! So I bake him some at my house and he gobbles them up.

    Does he like turkey? You could use ground turkey in place of the beef. Try BOCA burgers. They are great. Just like a burger but they are soy I believe. Or you can get it ground up and use that in place of beef. I dont like meat at all except chicken (occasionally). I will do what Nellie said and add it last for everyone but mine.

    sloan127- Geeze, it's a good thing we never eat there! It really stinks that so man places use meat juices to flavor everything.

    a reason for this?

    Is there a reason he at 9 years of age has decided to take this route? Has someone said something that influenced him..............the farmer in me is curious?

    I used to be a vegan- before I got pregnant with dd lol. That was the first sign! I wanted a big fat juicy steak! Dh said "have you lost your mind?"

    Anyhow, I ate a lot of tofu, lentils, black beans, ect. I would be doing the vegetarian thing now except dh won't do it.
    I still cook most of what we eat that way with the exception of dinner which is usually fish or chicken. We eat for little red meat.
    A fun recipe that dd loves- take firm tofu, cut up into small cubes. dice peppers, onions, and chop some garlic. Saute it all together with some black beans, cumin, chili powder, and a little kosher salt.
    Heat a whole wheat tortilla in a skillet, throw the above stuff in the tortilla, throw some cheddar or jack cheese on top, fold in half, heat in skillet, flip and heat, and there ya have it. We eat a lot of these.

    Also we're removed all refined sugar and white flour from our diets. I like to take a brown rice cake and spread all natural pb on it with a sliced banana on top. Make sure the pb is just pb- a lot of them have added sugar, salt and transfats.

    there are also grains like spelt, cous cous, ect that you can mix things in with.
