We did boil in the bag omelet.... Get a heavy duty zip loc bag. Drop in veggies and whipped eggs Shake mix (after closing up bag) Add to pan of boiling water.... C'est Volia - an omelet in a bag. Just keep the bag off the bottom of the pan otherwise the bag will melt and the omelet will leak.
Yes forgot our other fav... Flour tortillas Cold meat cuts (chicken, salami etc) Sour Cream Cheese Veggies (possibly stir fried first) Lay out tortilla Put a spoon of sour cream on the bottom add meat and desired veggies (peppers/onions etc.) small shavings of cheese Fold in two ends and roll up Add to a dry pan and gently warm through. Cheese will melt and mix with sour cream to give a wonderful sauce over the meat and veggies
We don't use the same recipes camping as at home in order to give the kiddos some variety. I googled "camping recipes" and adapted for our family. My boys loved the variety. We enjoy homemade granola bars...not hard crunchy ones, but a little softer. We also made chicken packets (heavy duty foil, chicken breast in each packet with minced garlic, Ital. seasoning, salt and a slice of lemon....GREAT!!) Trail Mix Sandwiches: (make ahead of time) 8 oz softened cream cheese mixed with 1 T lemon juice, 1 carrot grated, 1/2 cup raisins 1/3 cup chopped trail mix. Mix, put in ziploc, spread on bread, english muffins or pita. Granola bars: 2 c. rolled oats 3/4 c. brown sugar 1/2 c wheat germ 3/4 t. cinnamon 1 cup flour 3/4 cup raisins 3/4 t. salt 1/2 cup honey 1 egg, beaten 1/2 cup vegetable oil 2 t. vanilla preheat oven to 350. Spray or grease 9x13 pan. Mix dry ingredients then add honey egg, oil & vanilla. Mix well. Spread in pan. (I use cellophane wrap to spread it because it's sticky and it helps me to roll it out nice and smooth.) Bake 30 min. Cool 5 min. and cut into bars while yet warm. Too cool and they get harder to cut. These are GREAT!!
