    Settlers I did that on another web site we exchange recipe for the summer something you need to use the oven for. Could use grill, crock pot or anything other then the oven got some really neat recipes. I think it would be I would love to join let me know what to do ok.

    I love www.allrecipes.com! If you haven't checked it out you are missing a wonderful resource. You can search for ingredients to include or exclude (great for when you have an odd mix of stuff on hand and don't know what to do with it).

    Sounds like a good idea to me too. I love the allrecipes.com site.

    How do you want to do this? Should we do a certain category, then after everyone shares, move on to a new one?

    I would be very interested in authentic Spanish recipes. But as far as sharing mine, would a Taco Bell taco kit count? ;-)

    I LOVE this kind of food, but no one else in this house does *sigh*. Let me know when some one is going to cook it, and I'll invite myself over for dinner :D!

    settlers, I think I posted this before, but my first husband made me this gorgeous meal of fried chicken one time. It looked better than the picture on the Crisco can. He bit into it and spit it right back out- it was completely raw inside. He thought chicken was done if it was brown and crispy on the outside! LOL!!!

    Make it for yourself and put the extras in freezer safe dishes and freeze small portions for yourself.

    I like to make a lot of chile and freeze it so the boys can have chile any time they want.

    Oh Lord! When my husband makes chile no one can stand to eat it - it's so piping hot!

    Brenda that's the same here just to hot here to eat.
    What about some mild recipes.
    Some you cook with a slow cooker and don't have to start your oven in this dog days of summer

    Here is my kids favorite pie and they can even make it:

    Peanut Butter Pie
    8 oz cream Cheese
    1/2 cup peanut butter
    2 tablespoons milk
    1 cup powdered sugar
    4 oz cool whip
    1 graham pie shell

    cream cheese and sugar,
    add p-nut butter and milk and mix well,
    add cool whip and mix,
    pour into pie shell and chill for several hours.

    Your family is sure to love this.


    Mexican Corn Bread for settlers
    and anyone else

    1 cup cornmeal
    1 chopped onion
    1 small can cream corn
    2 eggs
    1 cup sour cream or buttermilk
    1/2 t. red pepper
    pinch of salt
    1/2 cup oil

    Mix together. Bake at 400 for 25 minutes oras you normally bake cornbread.
    From Hazel Gantt and she says it is from mexico. LOL I don't know!!!!!

    I think the chile sounds great, but I don't know if I am that ambitious. :grin:

    Here's my contribution to the ethnic category.

    Salsa Chicken

    4 skinless, boneless chicken breast halves
    4 teaspoons taco seasoning mix
    1 cup salsa
    1 cup shredded Cheddar cheese

    1. Preheat oven to 375 F.

    2. Place chicken breasts in a lightly greased 9 x 13 baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all.

    3. Bake at 375 for 25 to 35 minutes until chicken is tender and its juices run clear.

    4. Sprinkle chicken evenly with cheese and continue baking 5 additional minutes.

    Top with sour cream, if desired.

    I've made this a bunch and it's very good. I like to serve it with rice.

    Kris, I've not tried doing it, but I bet you could do this in your crockpot.

    This is down home southern food....

    Meatloaf Pie

    1 1/2 lbs ground round or ground chuck
    1/4 cup chopped onions
    1 to 2 slices of white bread, torn
    1 cup of milk
    2 eggs
    salt, 1 tsp.
    pepper, 1/4 tsp.
    pinch of sage, 1/2 tsp.

    Mix all the above ingredients together well. Press mixture in the bottom and sides of a glass pie plate. Bake at 350 degrees for about 40 minutes or until done.

    1 envelope butter & herb instant mashed potatoes
    1 tsp. prepared mustard
    1/2 c. shredded cheddar cheese

    Right before the meatloaf is done, mix together some pre-packaged mashed potatoes (mine only takes about a second to make. You pour boiling water into the potato flakes and it's done!). Then, mix a teaspoon of mustard into the potatoes.

    Take the meatloaf out of the oven when done. Spread mashed potatoes over top and sprinkle with shredded cheddar cheese. Pop back in oven for a few minutes to melt the cheese. Let stand 5 minutes before cutting....it cuts just like a pie!

    This is so good. I'm not a huge fan of meatloaf but I loved this! It's great comfort food!

    Here you go, Tamale Pie!

    2 1/2 cups of warm water
    2 Tbsp butter
    1/2 tsp salt
    3/4 cup yellow cornmeal
    1 lb. hamburger or sausage
    1 onion-chopped
    1 green pepper-chopped
    1 Tbsp chili powder
    2 tsp. garlic
    1 8 oz can tomato sauce
    1 16 oz can whole corn, drained
    1 can black olives
    1/2 cup cheddar cheese, shredded
    In a saucepan on high heat, heat water, butter, 1 tsp salt and 1 tsp. garlic powder. Bring to boil and slowly add cornmeal, stirring all the time. Reduce heat to low and simmer uncovered for 10 minutes making sure to stir it often. Be sure to cook the entire 10 minutes.

    In a 10" skillet over medium heat cook the meat, onion, green pepper, chili powder and garlic. Pour off the fat. Stir in tom. sauce, con, olives salt and pepper. Reduce the heat to low and simmer for appx 3 minutes. Put mixture in a 2 qt casserole dish. Sprinkle the cheese. Spread cornmeal mixture over meat mixture and bake in pre-heated ove at 375 degrees for 30-35 minutes.
    You can top with cheese, green onion and even sour cream when serving.
    Very quick and very yummy. And if you use mild powdered chile you will have a mild meal.

    NEVER fail fudge

    NEVER FAIL FUDGE

    3 cups of brown sugar
    2/3 cup of condensed milk (Carnation)
    2/3 cup margarine

    Bring these to a boil for three minutes
    Add:
    1 tsp vanilla
    1/2 cup of chopped nuts (we use walnuts)
    2 1/4 cups of miniature marshmallows
    2 cup chocolate, butterscotch or peanut butter chips

    Stir these until melted

    Grease a 5x9 pan or line it with wax paper
    Pour into pan, chill and cut into squares

    I hope these measurements are equivalent to terms you guys use in the US - if not let me know and I will convert if needed.

    Be very careful when making this - I ended up with a second degree burn today (Andrew went to put the spatula in the sink and got my hand with it - it stuck to my hand and blistered it BAD - and it hurts like a son of a gun)
