What's for dinner?

    What's everyone making/having for dinner each evening? I know these things pop up randomly in other threads, but I thought we could inspire each daily w/ our shared menus or just drool over something that sounds really good. And I'd like to thank Kris for the indirect inspiration to start this thread! She ALWAYS seems to have something yummy going on!!!;)

    I'll start.

    Tonight, it was plain Jane:

    Chicken Patties
    Mashed Potatoes
    Fried Okra

    I'm not! We are going to a VERY fancy restaurant to celebrate my in-laws' 50th wedding anniversary. Last night we had spaghetti and salad!

    Tonight we are having poor man's lobster in melted garlic butter, along with homemade french fries and garlci toast.

    YUM!!! I'm not even sure what "poor man's lobster" IS! But it sounds SO good and is making me drool even though I just barely finished my bowl of raisin bran!

    I'm a sucker for seafood, garlic, and butter in any combination!

    Yikes! Maybe I shouldn't have started this post! *LOL*

    I'm kidding, of course!

    Yes, WHAT is "Poor Man's Lobster"? Anything called "Poor Man's..." sounds about right for this family!

    Last night we just did grilled cheese sandwiches and chips. It was late when we got home and we didn't want left overs in the fridge because we are going away for the weekend.

    Tonight we will be having fajitas cooked over an open campfire and tomorrow the plan is ribeyes and baked potatoes again cooked over the campfire. Monday we will be back to the same old same old.

    Well ladies when I grow up with 10 brothers and sisters we couldn't go out to eat. We all loved seafood of any kind. So, my mom came up with poor mans lobster.

    What you do is take cod fish or any boneless fish you like we liked cod better.

    Put in a bottom of lined tin foil cake pan a stick of butter with two colves of garlic then put in oven melt butter, then take out of oven put fish on top and spoon butter and garlic on top of fish. Return to oven 350 and cook till fluffy around 20 mintues or so. Melt some more garlic butter and dip your fish in it. HMMMMMM good.

    I'm making Cheesy Chicken Enchiladas, Spanish Rice and Refried Beans for supper tonight. :)

    The camping sounds great. I don't suppose you are in the Dakotas. LOL


    We are going out to eat. WE have a favorite seafood place in St. Augustine FL and are driving down. I have been on the phone doing tech support all day and it looked like I was going to have to drive the opposite way 40 miles to do on site work, but at the last minute, I was able to get the store manager walked through getting the registers up. I really wanted today off, but it did not work out, at least I did not ruin our little 6 hour mini vacation.

    For lunch we had turkey and cheese sandwiches and cucumber and tomatoe salad made with italian dressing, and orange juice.

    Last night we had shrimp. I had dropped by the grocery store to hit the BOBO's before they went off and were replaced with new stuff. I noticed fresh shrimp at the lowest price in a long time. I picked up some and we had that last night and had our quite elderly freind over on short notice. He was quite pleasantly suprised. I cleaned it then cooked it in a bit of butter and a touch of oil with Garlic and Herb Old Bay, and salt and pepper. We had microwaved new red potatoes, grean beans, and sliced tomatoes. IT was quick but good.

    Tomorrow I will make Spaghetti and make enough sauce for a few meals. We will have it for lunch after church the next day and I will freeze a couple of quarts of sauce for later next week and whenever. I cook fresh pasta as needed the nights we use the sauce, that and a fresh salad makes a 20 minute meal.

    Sunday night we girls will have 7 layer burritoes and I will make veggie fajitas for dh.

    Monday will likely be something with chicken breast meat. Hmmm.

    We're going to Outback! LOL :D first time in a long time we're actually going out!!! YEAH!!!

    Last night, we ate at Chili's Too. One of dh's fave places, the other being On the Border.

    Tonight, hmmmmmmmm..... I'm still trying to get over a rough morning. And considering we might not even have heat to cook with it might be vienna sausages, Cheeze Its crackers, popcorn and jelly sandwiches.

    Kris: we are having hamburgers too! no gumption to make homemade onion rings.

    tomorrow: we are having bbq pork sandwiches and potato salad.

    monday: we will have steak and salad and potato

    tuesday: spaghetti

    Well, I WAS planning on tacos for dinner tomorrorw night, but when I got home, my DSS had left a message. I got back with him, and he wanted to know if we could swing by and pick him up after church. He'll be brining "a friend" he wants us to meet. Um, yes. Then he went on to say that this "friend" is probably going to be "the last girlfriend" he'll ever have. (Not that I'm too thrilled by that, because any girl that would accept him right now would NOT be a fine Christian woman, KWIM,) But anyway, I will be on my very best behaviorl, and I think I would be better off coming up with something special for them. Trouble is, Carl is at the Youth Conference all night; he and Rachael will catch up with me at church tomorrow. I'd kind of like to give him a "heads up" on this. I may try to call the pastor's cell phone later and leave a messge asking him to have Carl call me when he gets a chance.

    Wow, Amy wish I had even energy or brain to plan that far ahead. I always say I am going too but never do.

    Oh by the way my poor man's lobster turned out wonderful.

    I made homemade chicken and rice soup for Freddy and me. The kids said they wanted leftovers and some frozen lasagna we had here. They didn't like the sound of the soup. Then when they smelled it and saw it they changed their minds. It was good. Good thing I made plenty. Katie showed up and had to have a bowl too.

    Me, too, Kris!!! I try so hard to make up menus in advance, and life REALLY DOES go so much easier when it's done, but I just CAN'T seem to do it!!!
