I soaked ours Bambi in orange juice. DH's cousin is the "big game hunter", and he says orange juice or Italian dressing are both good for taking out the "gamey" taste, and also beer (!!!), though I've not tried that!
Dh didn't get home for supper tonight, so... we had TUNA NOODLE CASSEROLE. My dd stopped over for supper and she was excited to have something other than hamburgers Dh said he stopped for HAMBURGERS and went back to work to salt more streets.
The loaded potato does sound great. I need the recipe too. Jackie, how did the Bambi in orange juice taste? My husband keeps us supplied in meat in the winter. I need new ideas to cook with it. I do not care for the "wild" taste so I will try any suggestions.
It turned out really good. I let the tenderloin soak over night, then cut it into bite-size pieces, dredged it in flour with seasonings, and browned it in oil. Then I put it in the crock pot, and put some sliced onion in the oil until they were clear. Then they went into the crock pot. Then I put more oil and flour into my skillet, added some water and beef bullion and made a gravy with it. This also went into the crock pot. Then I cooked it on high for 4-5 hours and served it over mashed potatoes. I found the recipe on the internet.
We had a meatloaf, Irish potato soup (from a package from Ireland that mom brought home), and corn on the cob. I wanted green beans but we didn't have any after all... Aisling
Loaded Potato Soup: 5 or 6 large potatoes, cubed 1 lb. Velveeta cheese 1 med. onion diced (I saute mine in butter first.) 1/2 lb. bacon, fried and crumbled milk (to desired consistantcy) salt and pepper to taste Cook potatoes until slightly tender. Drain about half of the water (about halfway up the potatoes). Add cubed cheese, bacon and onions. Add milk as needed and salt and pepper to taste. Once the cheese has melted and mixed, serve! You can top with chives, shredded cheese, and/or sour cream. A tip for the bacon: I use kitchen scissors to cut mine into chunks before I fry it. That way I can just transfer it straight to the soup with no messy, greasy crumbling to do. I hope this makes sense. It's one of those recipes that I started making years ago and adapted to larger quantities as my family grew. I use 5 lbs. of potatoes, 2 lbs. of velveeta and a lb. of bacon. It is very easy and a dish that all of my picky eaters like!
Pam, sounds really good right now. It is only 8 degress with windchill at -3. That would warm me up real quick Thanks for the recipe.
We had pecan pancakes and bacon tonight. Something easy. The loaded potato soup made me hungry all over again though. The recipe for tenderloin sounded good too. I may try that tomorrow night. I will have to omit onions for dh though. He tries to steer clear of any veggies. He is a meat and potatoes man.
That's what people say about people that don't eat meat Deena, how do you live? I think its easier to live with out meat then veg. but that is just me.
I'm going crazy trying to figure out dinner. Its family movie night, means we "picnic" in the living room with usually pizza for the kids and DH and I sometimes order chineese or get subway. But we can't order out or pick up subway. I have frozen pizza for the kids ---thats the easy part. But what for me and DH, we are so picky its hard.
Yeah, I get asked that Kris! But what people worry about not getting if you don't eat meat is protein. I get protein in plenty of other places! But veggies have all sorts of vitamins and good stuff! Where do they get that?
My dh is not a veggie eater either. It comes from having a g'mom who made him whatever he wanted to eat (no leftovers either). Corn and potatoes are about all he eats. I LOVE veggies. I could be a vegetarian, except that I also LOVE fried chicken! I'm not a beef eater. I just don't like red meat very much.
