What is it??!!:? I found a Diabetic bread recipe that calls for it but I haven't heard of xanthan gum. Where can I purchase it? My mom is Diabetic and I was looking up some recipes for her.
I have seen it in many products before but never really knew. I did a search online...you may want to do that. I was going to give you a link but so many came up and I wasn't sure how much info you wanted. I did find a website: xanthan-gum.net that says it sells food grade xanthan gum. Yet I also read that some had allergic reactions to it...so who knows. Hopefully someone else can give you a better explanation.
Well...for gluten free baking it's called an "extender" it's used to give the breads/doughs/cakes elasticity that doesn't normally exist. In salad dressings and the likes it's a thickener/conditioner that doesn't breakdown. I think it's technically an emulsifier to keep thinks blended and keep them from separating. I use it all the time. It's EXPENSIVE ($10 for about 8 oz)...but it lasts a long long time. If you're looking to buy it, you should be able to find at a Whole Foods or the like in the "alternative" flours section. Or online. HTH.
