I offered to make dinner for a friend tonight, but now am worried about what to make. Her daughter is off of gluten and dairy (um, my dinners revolve around carbs and cheese). What is your favorite dinner idea using these restrictions? Thanks for any ideas.
There are some good gluten free pastas also...made of quinoa or brown rice. Paired with sauce, people have not even noticed that it was gluten free. The best tasting brand I've found so far is Tinkyada. Another idea is chicken enchiladas or quesadillas using corn tortillas.
Thank you for the ideas, I will keep them in the back of my mind if I ever offer to make a meal again. I went with a sheperd's pie (no crust) tonight.
Sheperd's pie is my go to meal. We have various food allergies and dislikes around here. I can never go wrong with simple meat, potato, and veggie. I do add cheese to it, sometimes, but DS would rather have it without. I make a small dish of cheese-less for him.
