Here's a zucchini bread recipe which we like: Zucchini Bread--makes 2 loaves 3 large eggs 3/4 c sugar 1 c vegetable or coconut oil 2 c raw, grated zucchini (If the skins are tender, they don't need to be peeled) 1T. vanilla----Combine these ingredients & beat well. Sift together: 3 c flour 1 t salt 1 t baking soda 1/4 t baking powder 3 t cinnamon--add dry ingredients to zucchini mixture, stir until blended Optional: add 1 c coarsely chopped nuts Pour into 2 greased 8" bread pans. Bake one hour or until golden brown. I'm guessing this would be good with Jennlyn4673's dh's gm's cream cheese frosting! I don't remember ever eating succotash--just heard about it. Now, if there would just be some way we could all get together & bring our dishes for each other to sample...
You could also make fried zucchini sticks. Just cut into sticks ( like carrot sticks) and bread them , then deep fry ( in a skillet) and use ranch or blue cheese dressing as a dip!
I got this email from iVilliage today for a recipe for Zucchini Cranberry Muffins. Servings: 24 muffins Ingredients: 2 cups all-purpose flour 1 tablespoon baking powder 2 teaspoons baking soda 1 teaspoon salt 2 teaspoons cinnamon 1/4 teaspoon nutmeg 3 eggs 1 1/2 cups sugar 1 cup vegetable oil 2/3 tablespoon pure vanilla extract 2 cups grated zucchini 1 (8-ounce) can crushed pineapple 1 1/2 cups whole cranberry sauce 1/2 cup raisins 1/2 cup walnuts Directions: Sift the dry ingredients together. Beat the eggs. Blend in the sugar, oil and vanilla. Fold in the zucchini, pineapple and cranberries. Add the wet ingredients to the dry ingredients. Mix until just blended. Fold in the raisins and nuts. Pour the batter into muffin cups and bake at 375 degrees F for 20 to 25 minutes, or until a knife inserted in the center of a muffin comes out clean.

When I make my zucchini bread I sprinkle the top with white and brown sugar before baking. It gives it an awesome crispy top. I am actually making zucchini apple butter right now. I've never made it before so I'm hoping that I will like it. I also have the recipe for zucchini pancakes (not a breakfast pancake), zucchini patties (grated zucchini,cheese,bisquick & onions) and sweet potato & zucchini latkes. I haven't tried any of these yet. I just got them from a friend who likes them all. If anyone would like a recipe, just let me know.
when this qusstion was first asked I had never made zucchini. But the other day DH got a bunch of it (no one around here has a garden so we had to buy it). I cut up 4 small zuchinni and 2 roma tomatoes and what was left of an onion (about half) and sauted the onion first and then the tomato and zucchini with some basil and oregano and salt, and then added a half can of tomato sauce....... and for never have making it DH liked it.
I see this thread I started has taken off! I'm loving seeing all these recipes. Thankfully my dh isn't a picky eater so I can try anything on him!
Patty, MMMMM!!! My grandma made it like this too.....minus the corn. Sometimes she would put meat in it too.
I know this is very late, but I grill ours. Well, actually hubby grills it. Nobody touches his grill.:lol: He slices them and puts them on shishkabobs, smothers them in butter, and puts seasonings on them, then grills them on each side. Yum!
