Zucchini?? How do you cook it??

    I'm supposed to be making zucchini as part of our dinner tonight. What are some different ways you can cook it? I've eaten it but never prepared it before. Thanks!

    I chop in into small pieces or rounds and saute it in butter and herbs ( like basil ,minced fresh garlic , salt and pepper - Mrs.Dash or whatever seasoning blends you have) for about 5-7 mins. I also add fresh chopped tomatoes and/or onion and mushrooms also.
    Also you can cut in length wise ( like strips) and brush italian dressing on it and grill it up that way for about 2-3 mins each side on medium heat.

    You can steam it or bake it. When I make baked chicken, I add the zucchini in with the potatoes and carrots (in the baking dish with the chicken) so it get all seasoned and stuff.

    I love it sliced and fried up in butter with squash and onions!

    It's also good washed and sliced like cucumbers (but don't peel the skin!), and put in a lettuce and tomato salad!

    But I LOVE it like the others said---fried with onins and some spices!!!

    Well I cooked it in butter & spices and then mixed that with sauted carrots and onion. It was fabulous! Thanks so much!

    Thanks ladies, the neighbor gave me more zucchini and I didn't know what to do with it. I will fry it with butter and spices... Yummy, sounds great.

    I make mine the way my mom made them. She would cube the zucchini, put it in a pot of chicken broth and add corn, peppers, salt, sliced onions, stewed tomatoes and cheese. You serve it when the cheese is melting.
    It is a dish that many hispanic homes make but I can't think of the name for the life of me. It is very delicious and filling if you add a lot of zucchini.

    Patty, could it be "Succotash?"
    Zucchini can also be sliced raw like carrot strips and used with chip dip. Or it can be combined with chunks of cooked meat, okra, and other garden veggies to make a gumbo. It's most liked at our house in zucchini bread, which is a lot like banana bread. Don't peel the squash for it. Just grate it and use in a quick bread recipe. The other ideas on here sound good also.

    I always thought Succotash had Lima Beans in it, and maybe corn. (I DON'T eat Lima beans!!!)

    I love mine grilled also. Slice it long ways and toss it on a George Forman grill. It is ready in minutes. A regular grill works just as well. I have also skewered it with other veggies for a veggie-ka-bob and grilled it that way as well.

    DH's GM makes a tasty zuchini cake with a cream cheese frosting. Yum-o!

    Yes, Jackie, succotash is made with Lima Beans and corn in it. I even add green beans. I LOVE succotash. No one else here does, so I don't make it very often.

    another way you can cook zucchini is to cut each zucchini in half lengthwise, drizzle olive oil or butter, sprinkle with paprika, salt, pepper, and parmesan cheese, bake in the oven...yummy!!

    wow, those all sound wonderful need to get some zucchini now and try it.. I only made bread with it this sounds wonderful...

    A friend of mine just gave me a easy recipe for zucchini bread using cake mix, ingredients listed on the box, plus 1 tps. vanilla, 1 tsp. cinnamon, and 2 cups of shredded zucchini.

    You got some great recipes...

    My favorite is Italian Zuccini:

    1 large zucc cut in thin slices
    1 large red pepper cut in thin strips
    2 Tbs Olive Oil
    2 Tsp Italian Seasoning (mix of oregano, basil, rosemary and parsley)

    Saute zuccs and peppers in olive oil, add seasoning while stirfrying/sauteing...pinch of salt & pepper just at the end.

    I like to serve with a sprinkle or two of parmesan cheese (fresh, not the Kraft kind!) :D

    No, it isn't Succotash.
    I used to have an awesome zucchini bread recipe and lost it when I was married. I have not found a recipe, to this day, that matches it but I loooovvvveeee zucchini bread.
