Wow, you guys really are addicts, aren't you? Easy, actually. I'm pushing to get my latest book written before school picks up again.
Here are some more kids' lunch ideas... http://takingtimeformommy.blogspot.com/2011/03/lunch-ideas.html
Peanut butter and Banana wraps!! mmm! Add some honey for sweetness. Macaroni and cheese with sliced chicken. Pretty much anything wrapped in a tortilla is good bell pepper slices in hashbrowns.
Mandiana: Its really good and so simple!! Add some different seasonings to make it really tasty. Or for the kids, ketchup!
onions and bell peppers........ Potatoes O'brien......... not very fond of it but I like to smell it cook.
my kids like that pasta roni stuff and lately its beenon sale really cheap. pizza bagels, or pizzas on a pita bread or english muffin biscuit bowls filled with chili or beef stew ------ form the grands biscuit over the back side of the jumbo muffin tin.(spray tin first)
I never thought of making biscuit bowls that way. I've got a giant muffin pan, and some cans of Dinty Moore from when it was on sale. I'll have to try that! I assume you cook the muffin like that first, and THEN fill it, rather than cook it filled? (I know that sounds like a dumb question, but I've assumed things in the past that I thought were no-brainers and was wrong!)
Jackie, yes cook your biscuit bowls and while they are baking I usually heat up the beef stew..... love dinty moore!......... and then spoon your hot beef stew into the bowls when they are done. my big muffin pan just has 6 spaces, there are 8 biscuits so I use a cookie sheet to place the muffin pan on so that you can grab the hot pan eaiser .. then you just cook the left over biscuits on the side and you have some to dip or slice the biscuits in half (after baked) to make a "lid"...
I have this good afternoon snack that is so easy and healthy. I put banana slices in the freezer on a cookie tray for a couple of hours. Take them out and put in blender, with a little honey and a little peanut butter. Blend to smooth consistency. It is good on a hot day too!
mac n cheese with some already cooked ham diced up in it. ramen noodles always go over well, we add left over chuncks of chicken or beef, sometimes frozen veggies & cheese. I recently started buying frozen chicken patties, we either make a quick sandwich or cut them up and put them in last nights left over pasta. with 6 kids we rarely have left overs but sometimes I just pull everything out of the fridge and tell the kids it's buffet day, everyone eats a little something different and nothing goes to waste. banana, honey, & peanut butter mashed & mixed then put on toast is quick & easy too tuna mixed w/crushed crackers, an egg, salt & pepper formed into balls then fried is also kinda quick, we like ours w/horseraddish sauce. if you have a clay, stone, or terra cotta pot w/a clay, stone, or terra cotta lid you can cook a whole chicken in the microwave in just 30 minutes. (if it's thawed) don't season it or add any water or anything. You will be amazed at it's juciness and flavor. my kids de-bone it and I intend for them to put it on bread or something but they usually just devour it. (this is a great way to cook chicken and not heat the house up too)
I echo the pizza bun thing -- we often have leftover hamburger buns and I top them with spaghetti sauce and cheese and whatever toppings we might have. Also, my husband gives the kids mac n cheese with hot dogs (I'm usually very anti hot dog - long story) or we have vegetable soup with grilled peanut butter sandwiches. Their latest obsession is Walmart has the individually frozen (uncooked) slider burgers. So they cook them with some onions and make White Castle/Krystal hamburgers.
Muffin Tins! I started making these when I found this blog http://michellesjournalcorner.blogspot.com/search/label/Muffin Tin Monday and for about 3 weeks it's all the kids would ask for for lunch, if I fixed anything else for lunch I had to promise a muffin tin for a snack! LOL I have a picky eater (sensory/texture issues) and so it's a great way to get more than carbs into him. It's super easy. I usually add things to it like a roll up (cut up), lots of fresh fruit, fresh veggies, yogurt, trail mix, cereal, cheese cubes, pickles, seeds/nuts, crackers, cookies, chocolate chips, dried fruit, pasta, leftovers, etc. whatever we have around. It's great like if you have 2 kids only enough lunch meat left for one roll up! LOL Presentation is a big deal for younger kids, so I went to the dollar store and bought some fancy toothpicks LOL the wooden ones get chunked but I wash the plastic ones to reuse them.
