I get pretty tired of making the same things day after day. Please share with me your favorite snappy lunch ideas! Please!
Today I made apple burritos. I put peanut butter and honey on whole wheat tortillas. Then I put some sliced apples through my food chopper and into the tortillas and wrapped them up. *poof* quick, cool, healthy lunch.
It was a pantry scavenging moment. lol Unlike most of my pantry scavenging adventures, it wasn't a complete disaster.
My kids will roll rice in a tortilla with whatever chopped veggies we have, and some chopped chicken. They usually add Ranch dressing to it.
egg mcmuffins, but make them at home salsa, chips, vegies, and fruit...if you have leftover rice put it in the salsa to make it heartier
We eat a lot of tortillas..sometimes we will fill them w/heated froz chicken strips, cheese, lettuce and ranch. Sometimes we roll them w/cheese and a hotdog in the middle and nuke it. We also have grilled cheese and tom soup, except we use pepperonis and mozzerella for the grilled cheese and if u dip it in the tom soup its kind of like pizza. quesadillas, w/anything from just cheese, to any variety of meats and or veggies.
I only had two apples and 4 kids. A few smacks on the food chopper and I could make them go further. So I used quite a bit of peanut butter and, with some crackers, everyone was full at the end.
I thought I posted, but obviously didn't!!! Monkey Sandwiches...peanut butter and banana! Also, there's the tried-and-true pizza bun or pizza bagel.
thats great Amie....... very creative. we make quasidillas a lot, just a tortilla with cheese sprinkled inside (or use american cheese) and het in the pan, I sometimes put a little margarine on the outside of the tortilla and either fold over one tortilla or use 2 small--- made like a grilled cheese sandwich. Grands biscuits pressed ove the bottem pan of a jumbo muffin pan, bake and fill with chili or beef stew (this makes the beef stew or chili go further too.) BLT or bacon and peanutbutter sandwiches tortilla with mayo, ham or other lunch meat and some cheese, rolled up cut like pinwheels make your own salad..... or baked potatos (get out left over veggies or cheese, etc) home made pizza or calizone chili mac ------ home made or canned chili with macaroni or boxed mac n' cheese meatbal sandwiches..... frozen meatballs mixed in a little tomato sauce with Italian seasoning and put on bread or sub rolls bagels open on a cookie sheet cover with american cheese or shredded cheese, broil until lightly bubbly (easly turns into pizza bagel with pizza sauce and pepperoni) TYSON has this AMAZING new "honey battered" chicken nuggets....... even my husband and I love them..... trick the kids with this one!!! ........ fruit pizza!! cream cheese base (on a lightly crisped tortilla or pita) and sliced fruit. Pita pizza or Pita sandwiches toquitos--- we love these corn dogs or baby corn dogs
sammie just said she remembered when I would put peanutbutter on a tortilla and put in a bannana and roll it up. (most the time I'd slice the banana...... then you don't need as many)
they are cheap and versitile..... ofcorse I like them cut in wedges, fried and sprinkled with cinnamon sugar:lol:
My son, the daycare children, and even me (wink) really like these... I bake mac and cheese, when I do not want to prepare it I will use Stouffers, then I will add tuna, canned peas (can use frozen, must cook them first though), and diced tomatoes. Sometimes we will add bacon. Any kind of pasta, cook it, then put it in a serving bowl, add in olive oil, minced garlic, and crumbled bacon.
My boys like tater tot casserole for lunch. Tater tots, cream of mushroom or cream of chicken soup, chopped chicken or cooked ground beef, mix top with a bit of cheese and bake until bubbly. We also do a lot of leftovers. Today I put some meat from bbq ribs over some lettuce and tomatoes with a bit of dressing. They liked that. Another favorite is leftover pasta, leftover meat (whatever I have), tossed with some italian dressing and some veggies. Ooh, and of course anything can go in a tortilla. They also like ramen noodles with leftover meat and veggies tossed in and an egg (poached with or without runny yolk) cooked in the broth.
