Bread yeast question...help!

    OK Ladies,

    I am NOT a baker or even the best cook but the kids & I have recently dragged out the ancient bread machine and made about 3 loaves of yummy bread. I ran out of the little packets of Active Dry Yeast we had bought at the store so when I went to Sam's Club today I bought some larger (think 2 1lbs bricks) of Fleischmann's Instant Dry Yeast (not realizing it wasn't the same as the Fleischmann's packets).

    So are they same (in a recipe) or how can I convert? The package has conversation for fresh yeast recipes but all my bread machine recipes have either active dry yeast or bread machine yeast measurements......help!!

    The kids want bread and I don't have enough in the last little packet to do it and I really don't want to fight the crowd at Sam's to dry to return it.

    Or throw out your best bread machine recipe (mine can make 1 lb or 1.5 lbs loaves). The kids really like the "Grandma's white bread" recipe we've been making (it uses milk rather than water).

    Basically, I have found that ONE Tablespoon is the same as ONE packet.

    I have the same BRICK of yeast.
    I poured it all out into a sealed container and I store it in the fridge. (Mainly because room temperature here, is NO WHERE near 70 degrees...)

    I make regular bread all the times and I have found that ONE tablespoon of yeast comes out to be right about the same as one packet.

    I use the bricks of yeast instead of the packets for everything including the bread machine. My bread recipe calls for "Red Star Brand Active Dry Yeast". I use the Sams club brick and the same amount and it always turns out.

    White Bread - Medium Loaf

    1 - 1 1/8 cups of warm water
    3 Tbs oil
    1 tsp salt
    3 Tbs sugar
    3 cups bread flour
    1 1/2 tsp yeast

    Sometimes I split the white flour with wheat and add molasses and cut back a little on the white sugar.

    Yummy Bread Sticks

    3/4 cup hot water
    2 Tbs sugar
    2 Tbs oil
    3/4 tsp salt
    2 cups flour
    1 Tbs yeast

    Put in the dough cycle in the bread machine. Then roll into bread stick size and place in a greased pan. Brush the top with melted butter and parmesean cheese mixture. Bake till done.

    You ladies are awesome. I had tried to go to the company's website and just keep going in circles.

    Guess we'll try it tomorrow and see what happens :)
