Coconut Milk

    Do have recipes calling for coconut milk? What are some of the ways you use coconut milk? My Mom gave me several cans of it and I'd like to find ways to use it up. Thank you!

    I use it instead of milk in my ice cream maker.
    I use it in Thai rice recipes.
    It is great in smoothies.
    I use my smoothie recipe to make popsicles too.
    It a good sub for milk in a rice pudding recipe.
    If a cake recipe calls for milk I use coconut milk, same with pancakes and french toast ( I add a little coconut milk to the egg mix).

    We use it in smoothies, cake, and pie.

    It makes the best bread pudding **ever**. I simply shake the can well and use it, measure for measure, as a substitute for milk.

    Rice and Peas
    1.5 cup white or brown rice
    2 cups coconut milk
    1 cup water
    1 can pigeon peas

    2-3 chicken breasts grilled (or cooked however you want) and cut into strips
    On the stove cook together the following:
    2 cans coconut milk
    1-2 TBS red curry paste
    1 tsp fish oil

    Serve over rice.

    I second the smoothies, Popsicles, in place of milk, etc...

    Here is how I make pineapple popsicles:
    1 can of crushed pineapple
    1 can of cocounut milk

    Mix, freeze and enjoy! They are so creamy!

    I have an old recipe for a pina colada cake too that I can look up if you'd like.

    I think in just about anything that calls for milk!

    I'm guessing it would make a fantastic glaze for a rum cake or other tropical cake (like, mix it with powdered sugar to make the glaze)

    We use it to make Indian curries as well as Thai dishes.

    I wonder how it would taste as a creamer for coffee...? Hmmmmm....

    I bet it would be good. Like a flavored coffee. Then again, I LOVE coconut, so it's hard for me to imagine it not improving the taste of anything.

    Ok, here's the Pina Colada Cake Recipe:

    Get a white cake mix (yellow works too) bake it according to directions for a 9x13 pan.

    Once it is done, take it out of the oven, and punch holes all over it. Pour the can of coconut milk over it. Then pour a can of crushed pineapple (with the juice).
    Put it in the fridge and let it cool. Then once chilled spread cool whip (8oz) or home made whipping cream over it. Spread coconut over the top. It is best if you make this a day in advance to have time for the flavors to blend.

    I will definately be taking that to a potluck next weekend! It would be this weekend if I hadn't already baked cupcakes ;)

    I got the ingredients for the Pina Colada Cake and am going to start making it today ~ YUM! We have company coming over tomorrow for lunch and I plan to serve it then...unless I decide not to share! :lol: LOL :lol:
