easy coffee cake

    I made this on new years day. It was great the origional recipe called for both butterscotch pudding mix and vanilla pudding mix, I only had sugar free butterscotch and it worked well. I also made a "drizzle" of powdered sugar, milk and vanilla for the top.

    Heat oven to 375. Spray a 9X13 pan. In a bowl mix a yellow cake mix, one small box of instant butterscotch pudding, 4 eggs 1 cup oil, 1 cup water and mix well. In a small bowl mix 1 cup brown sugar with 1 tablespoon cinnamon and 1/2 cup cold butter cut into small pieces. (this is the middle and the topping)

    spread half of the cake batter in a thin layer on the bottom (it looks skimpy but it will be ok) sprinkle half of the cinnamon sugar mixture-- I tried to use less butter lumps in the middle and save them for the top. dollop your remaining cake batter over the cinnamon sugar and spread out. sprinkle with remaining stusel and pat down a bit.

    Bake for 20 minutes, then turn down the oven to 350 and keep baking for about 30-35 minutes. check with a tooth pick or tip of a knife.

    you can use the cake mix made with splenda and the sugar free pudding mix.

    This sounds really, really yummy! I wonder how it would be with some sort of nuts mixed in the strusel.
