    I used to use fresh pumpkin. But not since I've moved to MO (PA had better prices).

    We're doing a similar trip in two weeks. Each child gets to pick a tiny mini-pumpkin and it's $7 for them.

    Amount Measure Ingredient -- Preparation Method

    1 cup Whole Wheat Flour
    3/4 cup Flour
    1/3 cup Brown Sugar, packed
    1/3 cup Splenda -- or sugar, as desired
    1 cup Chopped Walnuts
    1/2 cup Wheat Gluten
    1 teaspoon Baking Powder
    1/2 teaspoon Ground Cinnamon
    1/2 teaspoon Salt
    1/4 teaspoon Ground Nutmeg
    1/4 teaspoon Baking Soda
    1 large Apple, peeled -- grated
    3/4 cup Plain Low-Fat Yogurt
    1/4 cup Vegetable Oil
    3 Eggs

    In bowl, mix whole wheat and all-purpose flour, brown sugar, Splenda, vital wheat gluten,
    chopped walnuts, baking powder, cinnamon, salt, nutmeg, baking soda and apple; set aside.
    Whisk together yogurt, oil and eggs; stir into dry ingredients just until combined. Spread in
    9-inch square cake pan that has been prepared with non-stick cooking spray. Bake in 350
    degree F oven for 35-40 minutes or until cake tester inserted in center comes out clean. Let
    cool in pan on rack; cut into 16 bars. (Bars can be stored in airtight container for up to 3
    days, or individually wrapped and frozen for up to 1 month.)

    Pumpkin Apple Streusel Muffins

    2-1/2 cups all-purpose flour
    2 cups white sugar
    1 tablespoon pumpkin pie spice
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 eggs, lightly beaten
    1 cup canned pumpkin puree
    1/2 cup vegetable oil
    2 cups peeled, cored and chopped apple
    2 tablespoons all-purpose flour
    1/4 cup white sugar
    1/2 teaspoon ground cinnamon
    1 tablespoon and 1 teaspoon butter

    Preheat oven to 350 degrees F (175 degrees C).
    Lightly grease 18 muffin cups or use paper liners.
    In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt.

    In a separate bowl, mix together eggs, pumpkin and oil.
    Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples.
    Spoon batter into prepared muffin cups.
    In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon.
    Cut in butter until mixture resembles coarse crumbs.
    Sprinkle topping evenly over muffin batter.
    Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

    Cinnamon-Toffee Pecan Cookies

    1 (18-oz.) roll Pillsbury® Refrigerated Sugar Cookies
    2 teaspoons cinnamon
    1/2 teaspoon nutmeg
    2 teaspoons vanilla
    3/4 cup chopped pecans
    1/2 cup toffee bits

    Heat oven to 350ºF. Spray cookie sheets with nonstick cooking spray.
    Break up cookie dough into large bowl. Add cinnamon, nutmeg and vanilla; mix well. Stir in pecans and toffee bits.

    Drop dough by heaping teaspoonfuls 3 inches apart onto sprayed cookie sheets.

    Bake at 350°F. for 11 to 14 minutes or until edges are golden brown. Cool 3 minutes; remove from cookie sheets.

    ABall, you need to quit! I'm getting hungry over here! I love pumpkin, so I'm going to try some of those! Thanks for posting them.:D

    I really need the grocery stores to put stuff on sale!! My DH does the grocery shopping and he is good at picking things up for baking when he sees them on sale...... He got 2 bags of chocolate chips.... the kind that are half chocolate and half carmel flavor........ I don't know what I'll make with them.

    Pumpkin Pie Spice


    4 teaspoons ground cinnamon
    2 teaspoons ground ginger
    1 teaspoon ground cloves
    1/2 teaspoon ground nutmeg


    Combine together and store in cupboard.

    Thanks Martha..whoops I mean ABall!! LOL!! Really thought, thanks for the recipes because when fall is in the air, I tend to get really Martha Stewartish (I think I made a new word!!) and want to bake and do really homey, Little House on the Prairie stuff!!:D

    wow Amy I wish my dh would do the shopping he sends me how did you get dh to do it for you?

    Dh seems to think that I lose my mind somewhere around Septemeber 25th and don't get it back until December 1. I go nutty in the kitchen. I bake, I cook, I crock pot, I knead, I slice, I chop. And the house always smells sooo good.

    It's nice to know that I'm not the only one who gets all Martha Stewardish.

    Apple Pie Spice


    1 Tablespoon ground cinnamon
    1 1/2 teaspoons ground nutmeg
    1 teaspoon ground allspice
    1/4 teaspoon ground cloves


    Mix together. Store in a tightly covered container.

    Use in recipes that call for apple pie spice.

    APPLE CIDER POUND CAKE

    1 cup butter or margarine, softened
    1/2 cup shortening
    3 cups sugar
    6 eggs
    3 cups all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    3/4 teaspoon ground cinnamon
    1/2 teaspoon ground allspice
    1/2 t teaspoon ground nutmeg
    1/4 teaspoon ground cloves
    1 cup apple cider
    1 teaspoon vanilla extract

    Combine butter and shortening, mixing well; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Combine dry ingredients; add to creamed mixture alternately with apple elder, beginning and ending with flour mixture. Mix well after each addition. Stir in vanilla. Pour batter into a well-greased 10-inch tube pan. Bake at 325º for 1 hour and 50 minutes or until cake tests done. Cool in pan 10 to 15 minutes; remove cake from pan, and let cool completely. Yield: one 10-inch cake.
