    Most of the time, a cake -- or I'll be the one to bring the cold drinks. I don't cook much, actually. Maybe a greenbean casserole, or similar dish made with the California Mix veggies (broccoli, cauliflower, and carrots). You know, with the mushroom soup and the little canned fried onions.... If I'm feeling really energetic, maybe potato salad.

    I cook a lot and enjoy potluck or covered dish dinners. However Crystal, my 16 year old, says Lil Smokies in mustard and grape jelly sauce is her favorite and therefore must go to all dinners with us.

    Spaghetti is one of my favorites. I also do a cucumber/tomato/onion/bell pepper salad in Italian dressing that's usually a great hit.

    I have a broccoli cornbread that is REALLY good! But usually I bake one or two pies.

    Jackie, my mom makes broccoli cornbread. I haven't had it in years. I need to ask her for the recipe!

    I make a broccoli cornbread too....lol... It must be popular.

    A few other dishes I like to take in addition to the standard vegetable sides.

    I like to take desserts or appetizers mostly. Tortilla rollups, sausage balls, veggie dips or brownies, cakes and cookies.

    I just tried the most fantastic recipe last night for pumpkin bread I will share later.

    Banana split pie, banana blueberry pie, white chocolate raspberry cake--I always am asked to bring desert.

    I have a meatball hashbrown recipe that is good and easy, corn casserole, warm dinner rolls, baked spaghetti. Those are the big ones people ask for.

    Ok I was just thinking about how good a banana blueberry white chocolate respberry pie would be!:D

    The other night I had blackberry cobbler with banana cream pudding on top. I had both and wanted to see what they would taste like together. Delicious!

    Banana Blueberry Pie
    1 (8oz) pkg cream cheese; softened
    3/4 cup sugar
    2 cups whipped topping
    4 med firm bananas; sliced
    2 pastry shells; 9" baked--I make my own pie crusts and bake them before filling

    1 (21) oz can blueberry pie filling--strawberry is good too

    Mix cream cheese and sugar until smooth with mixer on med. Fold in whipped topping--I usually use the mixer on low. Fold in bananas and pour into pie shells. Spread 1/2 can pie filling over the top of each one. Cover and chill at least 30 minutes before serving. Can garnish with sliced bananas if you would like. Makes 2 pies--on to take and one to keep!:lol:

    Meatball Hash Brown Bake

    Ingredients
    • 2 teaspoons salt, divided
    • 1-1/2 2 eggs
    • 3/4 cup crushed saltines (about 20 crackers)
    • 6 to 8 garlic cloves, minced
    • teaspoons pepper, divided
    • 1 pound lean ground beef
    • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
    • 1 cup (8 ounces) sour cream
    • 1 cup (4 ounces) shredded cheddar cheese
    • 1 large onion, chopped
    • 1 package (30 ounces) frozen shredded hash brown potatoes, thawed
    Directions
    • In a bowl, lightly beat eggs. Stir in cracker crumbs, garlic, 1 teaspoon salt and 1/2 teaspoon pepper. Crumble beef over mixture; mix well. Shape into 1-in. balls.
    • In a covered skillet over low heat, cook meatballs in a small amount of water until browned; drain. In a bowl, combine the soup, sour cream, cheese, onion and remaining salt and pepper. With paper towels, pat hash browns dry. Stir into the soup mixture.
    • Transfer to a greased 13-in. x 9-in. baking dish. Arrange meatballs over top, pressing lightly into mixture. Cover and bake at 350° for 45 minutes. Uncover; bake 15 minutes longer or until meat is no longer pink and potatoes are tender. Yield: 8 servings.

    2 Boxes cheesecake mix prepared according to directions and made in a 9”x13” pan
    1 lg can crushed pineapple well drained
    6 med firm bananas; sliced
    1 16 oz pkg coolwhip topping
    1 can cherry pie filling
    Chocolate ice cream topping

    Sprinkle the pineapple over the top of the prepared cheesecake base. Then place banana slices over the top of pineapple. Spread cool whip over the top of bananas and then spoon cherry pie filling over the cool whip. Right before serving drizzle chocolate ice cream filling over the top. Serve. Keep refrigerated.

    White Chocolate Raspberry Cake

    1 Box Duncan Hines white cake mix
    1 small box white chocolate instant pudding
    1 ½ Tbsp raspberry jello powder (save the rest for the next cake)
    2 Tbsp veg oil
    1 1/3 cup milk or water
    4 egg whites or 3 whole eggs (using the whole eggs will not make a pink cake)


    Put all together in a large bowl and mix according to the cake mix directions. Bake according to box directions. Allow to cool.

    Frosting
    ½ cup softened butter
    ½ cup shortening
    Cream together and add:
    ½ pkg small white chocolate instant pudding mix (1/4 cup) save the rest for another cake.

    ¼ cup milk
    4 cups powdered sugar
    1 tsp vanilla
    ½ tsp salt
    Red food coloring to color frosting pink if desired
    Mix together until creamy. Add milk of powdered sugar to get desired consistency.

    Ice cake.

    Can serve with white chocolate shavings (or curls)on top and also can warm a little seedless raspberry jam and drizzle on top before adding shaved white chocolate.

    I sometimes will double the recipe to make a sheetcake and that way I double the frosting recipe to use the whole box of pudding mix. Quick and easy potluck favorite!
