I have used Jiffy cornbread mix for years, as it is safe for my son who has food allergies. I had looked on their website a few weeks ago for a recipe idea, and saw that they offer a free recipe booklet. I ordered it, and it came in the mail. There are so many great recipes in there. They make so many mixes that I never knew about  Most stores around here don't carry their other mixes, but I found a bunch of them the other day at walmart :D We are trying some of their muffin mixes (blueberry, raspberry, chocolate), and their chocolate chip cookie mix sometime this week. You can't beat that for $.50. Especially if they come out good ;) I will let you know how they taste.

I love their cornbread! I used some this morning to make corn pancakes (dh and I liked them okay, the kids not so much, but it was a nice change).I'll have to look and see if the stores around here carry their other mixes. I remember using their cake mixes in my Easy Bake Oven when I was a little girl. :)

Their cake mixes are the perfect size for a little dessert after our family dinner. Even with 6 of us, there's no need for a full-sized cake. I really like their whipped "frosting" mix, too.

I used to use their cornbread mix all the time, but I realized I could just as easily make my own from scratch. This comes in handy because, unlike the cake, with 6 ravenous cornbread fans, I need a BIG pan. lol

Thanks for the tip on the recipe book. I'll check it out!
(Oh, and perhaps you can find the other mixes on Amazon.com if not locally)

I made the muffins this morning. the chocolate ones were GREAT, the blusberry and raspberry ones, not so much. They were ok, but they had that cornbread taste, which wasn't bad, just not the taste any of us was wanting in our muffins. We will definately get the chocolate ones again, because when I make them from scratch, they are a little dryer than the Jiffy mix came out. they were very light and fluffy, not heavy at all :)

Actressdancer- I know what you mean about the size of the mix, but for us it works to our advantage. If it were any bigger, we would eat way more. For some reason when I make home made, I double up recipes so I don;t have to make them again for a while, lol. One box of the mix made the perfect size mexican cornbread for all of us to have just one piece of, otherwise, dh and I would have eaten way more than we should have, it is that good.
