Leeks.....

    DD is all about trying new foods these days. We just bought some fresh leeks and I need some guidance with them. Can anyone help me out? How to clean and cook them. Any recipes?

    Leeks are meant to be included in dishes almost like onions but are also delicious on their own. Split them in half, just the white parts not the green part. Wash them out really good to get out all the grit and dirt in them as the leaves are really tight together. Cut them in strips or slice in half circles.     Like rhi said wash them really good, they hold A LOT of sand.

    You can use them with potatoes and make a wonderful potato and leek soup.

    I agree with the PP's soup is great, as are circles and such. We also like to grill ours. I cut off all but maybe 2-3 inches of the dark green parts, cut them in half and wash REALLY good...usually I just hold the top and then put them in the water and shake around until all the sand falls out, brush with oil and put on the hot grill or grill pan until you get nice grill marks...serve with your meal. They are a great substitute for onions in almost anything, and I've also thinly sliced them on salads.
