    Okay, I posted this same question last spring and got some super, super new lunch ideas. Anyone else want to contribute their favorite homeschool lunch?

    this has been the topic here lately, you can search here to get a few threads to pop up.

    But we often have:
    sandwiches---- this sounds boring but if your kids are at the age where you don't make them sandwiches and you let them make their own it is a little more fun, also if you have a Panini press or a pocket sandwich maker you can vary the fillings and make some great creations. ( I have a sandwich griller and I can make 2 at a time, I havn't used it in a while because its been too hot )

    use a tortilla and put anything in from peanutbutter and banana to chicken ceasar salad or BLT fixings!

    Top Ramen, stir in a bit of last nights left over vegetables or diced meat

    chili or beef stew in a "biscuit bowl"-- made on an upside down jumbo muffin tin with grands biscuits

    fritos with chili and cheese ------ frito pie

    I love the new Honey battered chicken nuggets by Tyson......

    I like the new Yokisaba noodle packs.... just add water and microwave, they are better than top ramen and only $1 usually

    Tombsotne pizza-- usually pretty cheap

    camples soup is going to be on sale and there are coupons out for it

    and ......... ta da.......... NACHOS

    corn chips or tortilla chips with shredded chedar or mexican blend..... microwave for 45 seconds to one minute..... serve with salsa.

    qusidilla, a large tortila buttered on one side--- put buter side down and put some cheese, fold over...... cook on both sides until melty and stating to get al little crispy. cut in wedges serve with salsa

    You can make up several quesadillas at a time by leaving them flat (assembling them like a sandwich) and putting them in the oven until the cheese is melted. I can usually get two on my rectangle stone and three on my large round stone. With two oven racks, that's 5 at a time.

    Take a packaged Mexican Rice, add hamburger to it, and stick it in a tortilla. We discovered this accidently the other day, and my girls really like it! (Phillip's another story...eats rice only when he has to!)

    Tortillas are a favorite of ours, too. If bought individually rather than as a pack of fajitas etc, some savings can sometimes be made.

    J: Cheese, chicken strips, salsa, sour cream. They are very tasty! (Like, fry up the chicken strips, maybe with a bit of red pepper, too.)

    'Mexican night' is a highlight...

    My girls will chop up chicken with veggies (carrots, zuchini, squash, celery...whatever we have around) and put them in a tortilla with Ranch dressing, or sometimes Fried Rice.

    Jackie: Sounds good; sort of an 'umptious scrumptious' as we say... .

    Yes, you can do a lot with tortillas.

    Sorry, I posted the question then couldn't find time to get back on here for two weeks! But thanks so much for sharing, everybody.

    Our recent favorite is a Chinese recipe that boils down to leftover pork chopped up tiny with rice, peas, soy sauce and garlic. Heat it through then add shredded lettuce. It's good in a bowl or in a tortilla.
