My kids LOVE these. They're awesome for an out-the-door breakfast (which we're doing all week because of VBS) or just a snack. Peanut Buttery Bars 1.5c. oatmeal .5c. peanut butter .5c. flour (I use whole wheat) .5c. honey (you can substitute agave nectar) 1 egg (you can substitute apple sauce) Mix together, pour in a greased dish, bake at 350 for 15 minutes. Cool completely in the pan before cutting. Store leftovers in the refrigerator. YUM!
Yum! When I was pregnant with my first I would make something similar to this. Then I would spread more peanut butter on top. (I craved peanut butter like CRAZY, can you tell? LOL!) And now I want a PB&J. (I am pregnant... I should stay out of food threads! XD)
I made these - not what I expected, but a very pleasant surprise. I thought they'd be a rich, sweet treat. Rather, they are a great flavored, hearty, chewy bar. Not too sweet at all. I can see why you say they're a great breakfast.
So easy, so good. I've made these before. My kids are not huge on oatmeal, so when I can get it in them, I love too. It's also very good if you substitute mashed banana for the egg/applesauce.
I ended up using a 9X9 glass pan. i used some wax paper to help push them down and make them even. was very very good
I used an 8X8 glass pan and they turned out delicious. I cut them and wrapped individually in plastic wrap before putting in fridge. Now, I can send them in hubby's lunch or my son can grab one when he needs a snack.
They sound yummy, I wonder how they would be with rice flour. Has anyone made these with "natural" peanut butter?
These were great! My DS is allergic to nuts and eggs so I subbed sunflower seed butter for the peanut butter and plain yogurt for the egg....but we loved them. Thanks for sharing the recipe
I used to be gluten free, I think rice flour is a little gritty in baked recipes like this. It isn't a lot of flour, but you could maybe mix brown rice flour and teff and probably get a nice "wheaty" flavor. OR use a premade gluten-free mix.
Yay, I'm so glad some of you tried this I've been doubling it lately and putting it in the 9x13 dish. For the regular recipe, I use the square pan like some of you mentioned. On the applesauce substitute, I use a little less than 1/4c. or so. I just kinda eyeball it to be about the same volume as an egg. It tastes zippier with the applesauce, imo. And yes, it's not really a sweet treat, but more of a chewy hearty bar! Although if you were in the MOOD for a sweet treat, I bet you could add chocolate chips, hehe. ETA: I was thinking of trying this... doubling the recipe, then putting half down in the pan, then spread a layer of jam, then add the other half on top. ?? Do you think this would work? It would be like a pb&j in theory...
