Amy...I did what you suggested and used biscuits and they turned out so yummy. Everyone ate them up. There wasn't one left in the building. Thanks so much for the suggestions everyone! I ended up making some chocolate chip cookies (from the freezer section and they were so good too!
One of the mothers who is very into healthy eating bragged and bragged on them! Yay! She was so sweet. She told me from now on I have to bring those to all functions, lol.

I make a very simple potato salad. We are strange and like it warm, if there are lots of left overs, I always call my mom, she loves it cold. Its not a reall chunky kind. Amy's Potato Salad *1 dill pickle chopped up or dill relish (1/4 cup) *1/2 red or white onion or 3-4 green onions, diced small---use whats on hand or your preferance of onion. *5-6 medium potatoes peeled and diced in one inch cubes, boil until soft when poked with a fork, drain in strainer 1 cup mayo 2-3 T. yellow mustard 2 t. dill weed 2 T. parsley flakes (more or less depending on your taste-- its just for looks 1/2 t. salt dash cayenne pepper while the potatoes are boiling, mix the other ingredients in a measuring cup. When the potatoes are done, drain. Put half of the mayo mixture in the bottom of a large bowl, put the potatoes in and put the rest of the mixture on top and mix together. Smooth out and sprinkle with paprika (if its for a party if not I don't bother). Increase amounts as needed for larger group of people. Serve warm or cold. It should be creamy.
