Pecan Recipe - kid friendly

    Does anyone have a kid friendly recipe using at least 1/2 a cup of pecans. The kids are entering a baking contest here in town. The categories include: cake, pies and tarts, cookies/bars/squares, candy, breads, or miscellaneous. The only requirement is that it uses at least 1/2 cup pecans. I really want the kids to be able to do the majority themselves (even though I know that most of the moms will do it for their kids). Thanks!

    If your children can use a food blender or processer with your help, they might enjoy experimenting with:

    2 cups nuts, processed quite fine
    1/2 cup whole dates, pitted and chopped
    Honey--enough to make a dough


    Process the nuts. Turn them out into a bowl. Stir in the dates. Add honey, a teaspoonful at a time until a dry dough forms. (Careful! Don't add too much honey!) Roll into balls or press into a parchment-lined pan. Ready to eat!

    That's the basic recipe. You need to use whole dates, and cut them up yourself, because they are "stickier" than those you buy already chopped and rolled in flour. You can also add raisens, chopped pecans, coconut, chocolate chips, dried apricots, etc. to the nut "flour" before adding the honey, sorghum, maple syrup or whatever you use to bind it together.

    You can also roll these in coconut flakes, sesame seed, or oat flour after forming the balls. (Note: if you care to cut back on sweetness, you may use a few drops of water. You'll need less honey to bind it together, if you do.)

    Also, any type of nuts can be used. I made some tonight combining pecans, walnuts, almonds, flax seed, & raw cashews.

    Oops! I just reread your post and see that this is a BAKING contest! And these cookies are raw. Oh well, you might enjoy them anyway!
