TNT Tasty Fish Recipes?

    Do any of you have any good, tasty, tried 'n true fish recipes you could share, please?

    I love Tilapia and Catfish breaded with Zataran's Fish Fry ( its like a corn meal texture but not as grainy) and fried in about an inch of vegetable/canola oil. YUMMMMYYYY!!!

    I also BBQ salmon all the time. I leave the skin on and cook that side first ( just a minute longer then the other side , so about 6 mins, medium flame), then flip and cook for 5 min on flesh side down. I have used a regular BBQ sauce on it , sesame marinade ( in a bottle) and teriyaki sauce also . I brush on the sauce on both sides and let it soak in for 30 mins. I also BBQ in a fish basket ( square with handles) , that way it doesn't fall apart on the grill.

    I LOVE Ahi Tuna. I make a paste of soy sauce and wasabi, smear that on the tuna ( lighty) , then roll the tuna in sesame seeds , then pan sear in olive oil on ALL SIDE ( so around it also) for 2-3 mins all side. Make sure the sesame seeds don't brown or your fish will taste bad.
    I also coat Ahi Tuna with Chinese 5 Spice ( sold in bottles with that name) and then cook that in olive oil for around 3-4 mins ( or longer if you don't like it raw in middle) on each side ( just top and bottom).

    You don't cook fish with TNT unless you want 'em Cajun.
