Cheap Meal Ideas?

    Meat loaf
    1 lb ground beef
    1 lb ground turkey
    1 lb pork sausage
    diced garlic
    2-3 eggs
    1/2 C bread crumbs
    seasoning ( I like Tarragon, Pepper, Dill, sometimes Sage or Oregano)
    diced onion (optional)

    Mix all ingredients in bowl. Form into loaves in loaf pans (usually make two). Cook at 350 F for 45 -60 minutes, until juices run clear.

    This usually turns out really moist and has a lot of flavor. PLus with 2 loaves of it, there'll be leftovers. The leftovers should be covered when reheated to prevent drying out. My dh hated meat loaf until I made this for him.

    Wow! Thanks for starting this thread. My time right now is limited, but I will share some recipes tomarrow.

    I have been a housewife for almost 4 years now. I have learned in order for me to stay home I had to get the budget under tight reigns! I do sometimes fall off my horse and am scrambling to feed the family (5 people who love to eat!!) on $35 bucks.

    If your family is not big eaters them Angelfood Ministries is a good option, although by shopping for bargins, I can usually get a better deal than they offer! Also to feed us I would need 2 boxes making it 50 for a weeks worth of food.. and honestly I can do better than that if I need to!

    I shop at walmart pretty exclusively, we don't have an Aldi or Save A Lot close enough for regular trips there, so I don't go there.

    :( We have no super walmart near us! BOO HOOO!!! Oh well.

    When we lived in AZ I'd go to the one in Scottsdale b/c they would honor all the adds of the local grocery stores, so it was like hitting 5 stores at once and getting ALL the add deals (except b/one get one free dealies).

    I would check with your Walmart...I think price matching is standard, even on food...sometimes they are sneaky about it though and don't let folks know.

    I was in a Super Walmart in another part of Az and I happened to have local adds with me, there was nothing posted in the store like the one I usually went to, but when I got to check out the girl said "Yes, we do match food, we just dont advertise it here b/c it makes it difficult". Sorry...me saving money difficult for you is not my problem! DO IT! LOL :D

    i've had my local Acme honor other store's prices too. I remember once I mentioned to the clerk as I was buying something...I said "isn't it advertised as blah blah blah" and she said "No, it is that at Genardi's", then she called the mgr over and they overrode it and gave me the Genardi's price! LOL! CRACK ME UP.

    Also, look into "recyclebank". Our trash company uses their program for recycling. We earn money back when we recycle. It's good for buying coupons at my local grocery stores. I went to Acme last week with a $10 off $50 coupon and a ton of others. I got 12 bags (stuffed full, including diapers) of groceries for $49.92. :D They do NOT like me there! LOL!

    I have a coupon bar under my regular "tools" for the computer......... I can print coupons for items I use.


    Krista, did you ever go to the Grocery Outlet? (they have one here in Tucson and Pheonix.)---my step dad ownes the one here.

    we spend way to much money on groceries, I need to cut back too, especially with DH only working 40 hrs a week.(we are fine if he works over time).

    I've noticed though if you have a product you like, call the 800# on the box (the one that says if you have questions call.......... ) tell them how much you like their product(s) and ask if they have coupons they could send you (and recipes!) I do this all the time about every 6 mo. or so.

    If anyone has babies on formula, I have a few resorces for you to get free samples......... (I've only been sharing with Jenpooh since I know she uses formula) its always nice to have those for emergencies --- diapers too for that matter...... but don't forget when you sign up for diaper samples request a size bigger than what you use and for formula, tell them you are exclusivly breastfeeding....... the coupons will be bigger.

    I don't know who can use this information, but WIC has much lower (higher?) income standards than say, food stamps. In other words, many families qualify for WIC when they make too much for other state aid. And a lot of people would rather not use food stamps. WIC gives formula for babies under 1, cereal, milk, sometimes veggies and eggs, and a couple of other basics. Even if you are a BFing mom, they help with tuna, carrots, cereal, milk, cheese, etc. for mom. Our WIC office also gives voucher for use at the local farmer's market. I don't know how that works, but moms I know have enjoyed the fresh produce each month.

    printed coupons are not going to work much longer. that is what our Wal mart told me yesterday. they wouldn't even take mine...

    No stores around here take printed coupons.. haven't for a few years actually!

    You can contact companies.. and (hint hint) complain.. they will send you coupons, free stuff you name it! or.. just contact them and ask them for coupons!

    they still take printed coupons here but my priter died this week.

    I hated when they kicked us off WIC, Eva was just 3 they said she was in the 95% tile of her weight and height, she didn't need it anymore. (plus they kept getting her lost in the system)---- I didn't have tha problem in WA.

    Thank you all so much. This has been a really big help. I can't wait to try these recipes. As soon as I get a moment, I will post a few of the meals I already use. They are ones that my mom cooked when I was little and we were on a budget.

    Becky and I have been talking back and forth about this. right now if you have prescriptions, get them transfered to CVS if you have one near you....they have a deal right now if you get their card you get $25 gift card for each prescription, up to 4...... I did! I will get $100 In gift cards----- cha ching! christmas shopping! they have toys and I can get stocking stuffers too.

    As promised, here are a couple of meals that I fix...

    Peppy Pork and Beans
    Mix a can of baked beans, hot dogs, and 20 quartered pieces of pepperoni in a sauce pan and heat until warm. Serve with biscuits and salad.

    Pot Roast in a Crockpot
    Place a beef roast in bottom of Crockpot. Cover with one can of French Onion soup. Add as many peeled potatoes and carrots as will fit in the pot (usually about 6 or 7 potatoes) and 1 small bag of carrots. Peel 2 onions and quarter. Place on top. Cook on low for 8 - 10 hours or until meat is falling apart. Serve with homemade bread.

    That is EXACTLY what they did with my son here in PA, only he was not quite 2 and in the 98th.. mind you he is a tall boy, but he is not a big boy at all! I told them what my ped. told me, which was that once he was running around, he would lengthen out/ get thinner or whatever you want to say... which he did.

    Chicken & Rice Casserole

    1 ½ c rice
    2 small tins deboned cooked chicken (or leftover chicken!)
    1 box frozen chopped broccoli, thawed
    2 cans cream of mushroom soup
    1 ½ c shredded cheddar cheese
    1 tsp salt
    1 can Durkee French Fried Onions

    Preheat oven to 350 F.

    Cook rice; combine all ingredients (except Durkee Onions) in large bowl, mix well.

    Bake in large casserole (with Durkee Onions sprinkled on top) until cheese is bubbly and onions are browned.

    Chicken Pot Pie

    1 whole chicken or 4 breasts; cooked & cut into bite-size pieces
    1 can cream of mushroom soup
    1 can cream of celery (or chicken) soup
    1 can mixed vegetables

    Mix together and put into 9"x13" baking dish.

    Topping:
    1 c self-rising flour
    1 c milk
    1 1/2 stick melted butter
    MIX - pour over top of veggie mix

    Bake at 400 F for 1 hour.

    * In a pinch I have substituted canned biscuits for the topping

    Chicken with Stuffing

    Yield: 4 servings

    INGREDIENTS
    4 (4 ounce) boneless, skinless chicken breast halves
    1 or 2 (10.75 ounce) can condensed cream of chicken soup, undiluted
    1 1/4 cups water
    1/4 cup butter or margarine, melted
    1 (6 ounce) package corn bread stuffing mix

    DIRECTIONS
    Place chicken in a greased slow cooker. Top with soup. In a bowl, combine the water, butter and stuffing mix; spoon over the chicken. Cover and cook on low for 4 hours or until chicken juices run clear.

    * Use two cans of soup for more sauce.

    Russian Chicken

    6 chicken breasts - boneless/skinless
    1 cup of Russian Salad Dressing
    1 package of dried Onion Soup Mix
    3/4 cup of water

    Stir ingredients together and pour over chicken.

    Bake on low for 8 hours - very tasty with rice or over noodles.

    Cowboy-Crock Pot

    3 medium potatoes, sliced
    3 carrots, sliced
    1 small onion, sliced
    2 T dry rice
    1 t. salt
    1/2 t. pepper
    1 lb. Ground beef, browned and drained
    1 1/2-2 C. tomato juice* as needed to keep dish from getting too dry

    1. Combine all ingredients in slow cooker.

    2. Cover. Cook on Low 6-8 hours.

    * lg can tomato sauce (15 oz) can be substituted

    Crockpot Rigatoni

    28 oz Jar spaghetti sauce
    12 oz Rigatoni, cooked
    1-1/2 lbs Ground beef
    3 cups Shredded mozarella
    1/2 lb Pepperoni slices

    In crock pot, layer half of each ingredient in order listed. Repeat.

    Cover, cook on low 4-5 hours

    Quesadillas are very easy and cheap to make. They're a BIG hit in our home for lunch or a quick supper. You just butter one side of a tortilla, place it in a skillet on med-high. Sprinkle shredded cheese (I use cheddar or taco blend) on top. Add meat (*) if you want. After the cheese has melted a bit, flip one side over to top the other side, being sure the outsides are browned nicely. Place on a plate and cut into four pieces (I use a pizza cutter, which is quick and easy). Serve with salsa, sour cream, and/or guacamole.

    * Any time I have leftover meat I put it in a ziploc bag and toss it into the freezer. It doesn't take much meat at all to make quesadillas. I've used leftover taco meat, chicken (mostly), diced ham, crumbled bacon, shredded roast beef, etc.

    You can also add cooked, drained beans (ie: black beans, kidney beans, etc.). I'm sure you could probably add other veggies as well. Any ideas?
