Cheap Meal Ideas?

    I used to have one of those sandwich pockets things.

    I used to use it as sort of a waffle iron.

    Dh loves cake hot out of the oven. It is not feasible to do this each night in terms of time and waste. I would make up a cake mix then put it in a pitcher with a lid. (measuring pitcher). I would then pour batter into each of the four sandwich sections until just under full, like 2/3 to 3/4. The close the hot machine and cook them. We ended up with 4 nice freshly backed wedges of cake. We would use the rest of the cake mix the next night or two.

    This works iwth pancake mix, some muffin mixes, corn bread mixes, etc.

    A wedge of yellow cake with strawberries, or cocolate iwth icecream on top while hot is great.

    Don't forget the Pam. LOL

    Always wanted to try it on things like crab cakes etc. but never got around to it.

    In my mom's store they were selling omlet maker machines (same princaple) and they came with no instructions and she thinks they were from demos for Macy's..... I didn't get one but have you seen that infomercial for something simmular? they put stuffing and a can of soup in them and make "stuffed soup".. and brownies and such. Gives great ideas

    I was told that fried rice was like the casserole, you can add all your leftovers into it and it turns out great. I use what ever veggies I have on hand, and meat to make a quick meal. I make the rice in the morning and then the dinner at night quick and easy.


    Quick easy cheap Fried rice

    2 cups or so of cold cooked rice
    2 carrots sliced thin
    1 clump of brocolli
    1/2 cup diced onion
    3 cloves garlic minced
    1 cup or so of cooked meat, chicken etc
    2 eggs
    1/4 or so of Soy sauce (just a guess)

    Cook the rice and have it chilled in the fridge. Hot rice will just end up in a big yucky clump.

    Slice carrots thin, and broc. into little florets

    dice the chicken if needed into bite size chunks

    dice onion and garlic.

    Put these on a platter until you have everything chopped and ready to cook.

    Put a little olive oil in large hot skillet, add carrots and onion and about 1/2 of the garlic.
    Cook until carrots start to get tender..just a few minutes

    Add Broc. stir and cook until the broc changes to a
    bright green and starts to get tender.

    Remove veggies to the platter

    Put more oil into the skillet add the meat and garlic. Depending on how the meat was orginally cooked you might not need the garlic, or you might need more it depends on your taste.
    Saute the meat for a few minutes until heated through.
    Move to the platter with veggies

    Scramble the eggs in a small bowl

    Add some more oil,

    Cook the eggs stiring often to break into little pieces

    Add more oil if needed to keep the rice from sticking.

    Add the rice and veggies and meat

    Add soy sauce by dribbling it over the rice while stiring. Add enough to color all the rice a uniform color.

    Heat just until the rice is heated through. Stirring often.
    Put it all back on the platter and you have a nice serving tray and only one dirty platter, and one dirty pan. If you use a non stick pan you dont' have to use as much oil but it really adds some flavor.

    Egg rolls

    1 package egg roll wrappers
    1 small head cabbage
    1 lb hamburger meat
    1 carrot grated
    1/2 cup grated onion (opt)

    1. chop dice slice cabbage until thin and little peices
    2. Cook hamburger meat until done breaking it into little pieces.
    3. Season the meat really heavy with salt and pepper. This is the only seasoning in the recpie and it really needs to stand out.
    4. in a large bowl mix veggies and meat.
    5. lay out one egg roll wrapper so it looks like a diamond and one point is towards your belly. (Does that make sense?)
    6. moisten the edges with some water, or egg white and a basting brush, or your fingers
    7. Put filling in the top corner and roll until you come to the first side corner.
    8. Fold both ends in. Making sure they stick to the roll.
    9. Roll up the rest of the way making sure the end is stuck well from the water and no filling is going to leak out.

    10. Fry in hot oil. These are suppose to be really like brown, blondish in color. don't over cook them.

    This makes a ton, I don't have a package of wrappers or I would tell you how many therea re in the package i buy.
    We eat this as the main dish, with egg drop soup as a side.
