    Missy, I make that meatloaf pie!! Did you get that from Quick Cooking magazine?
    My mom used to do a thing where she would make a hamburger shell, bake it and then fill it with m. potatoes or stuffing.

    Speaking of meatloaf, I bet you all know you can make mini meatloaves in muffin tins. It really cuts down on baking time.

    I guess I did get it from Quick Cooking since I get that magazine. I had truly forgotten where I had found it. It is really good don't you think?

    :lol:...Becky! When ds was an infant I worked as a cook in a preschool/daycare to be able to have him at my side...one day I decided to make those meatloaf cups, turn them upside down and put a little ketchup on top to make them look like volcanoes. They HATED them! I couldn't believe it--I thought it was so cool!

    shreded beef enchiladas and enchilada sauce

    I make the beef in the crockpot.
    3 lb beef roast
    1 can diced chile pepers
    1 small onion slice thin
    2 T. chili powder
    1 T. cumin
    1 can chicken broth
    Put in crockpot for 8 hours on low, take out and shred with 2 forks, add a little of the liquid. ( I make this the day before.) When ready to use add 1 cup of sour cream and 1-2 cups jack cheese.

    Red Enchilada sauce:
    1 large can tomato puree
    1 can chicken broth
    1 can (4 oz.) diced green chiles
    1 small onion diced
    2 cloves of garlig minced ( 1 t, from jar)
    2 T. cocoa powder
    2 T. chili powder
    1 T. cumin
    1 t. oregano
    Mix together in large pot, simmer until condenses a bit, about 20 minutes or longer if you have the time.
    To put together:
    soften small corn tortillas in microwave, place a small bit of sauce on bottom of 13X9 pan ( you may need a second smaller pan too) fill tortillas with meat mixture and place seam side down on pan, cover with enchilada sauce and then shredded cheese bake in oven (at 350) for about 30 minutes. I do not like cheese or sour cream so I use the plain shredded meat to fill a tortilla and fry in a little oil like a chimichanga. I put a little sauce over it.

    One week we had spaghetti and enchiladas on the menu, I accedentaly opened up the can of tomato puree instead of tomato sauce when I was making home made spaghetti sauce, it turned out a bit tomatoeeee, but when I made the enchiladas I just condensed the sauce a while longer it was ok. :)

    I love reading new recipe, in books and on line, I found a good one for orange cake, it has orange jello and vanilla pudding in the topping, but I can't find it, it was in a tase of home or quick cook magazine can some one help?

    Simple Nachos

    No glamorous recipe here, just how we make our nacho's

    Nacho chips (usually the bite size ones)
    1 lb cooked hamburger
    Shredded cheese

    Put the nacho chips on a cookie sheet, then cover them with the cooked hamburger, top it with shredded cheese. Hubby likes to put the salsa dressing on the mixture before it even cooks but I like my food bland and add it to the side of my plate after it's all cooked.

    Cook it in the oven until the cheese is melted.

    I have added a few recipes over at AtoZ. They are for pizza crust and Italian beef and maybe one more, I love to share recipes, if any one has something they need a recipe for let me know. Last time I made the nachos like that I used the can kind of nacho cheese chip dip (jalepeno flavored) and add cut olives, green onion and sour cream.-----I love making things for my family even though I won't eat them... I Only eat cheese if its on pizza! On my nachos, I just put the hamburger on the chips, green onions and salsa or ranch dressing.

    A favorite in my house

    My husband and kids love this easy recipe and it's so quick to fix:

    Chicken & Rice

    - Boil 4 boneless/skinless chicken breasts (can be tenders)

    - Prepare a package of Lipton Rice Sides (Chicken Flavor) as directed substituting chicken broth for the water

    - Spray the bottom of a cassarole dish with cooking spray and add the boiled chicken (cut up in bite-sized pieces)

    - To the rice mixture, add one can of Cream of Mushroom (or Cream of Chicken, whichever you like) Soup and stir.

    - Pour the rice/soup mixture over the chicken and bake in an over at 350 for 30 minutes.


    It's quick, easy and my family loves it! The leftovers are good if you add chicken broth to it before you heat it up, too. (I made a huge pan of this for a potluck dinner one time and there wasn't a piece of rice left).

    P.S. I'm careful about chicken, too. With this recipe it's not only boiled, but also baked, so you know it's done! :wink:

    This soup is so simple and is really good. If you like spicy vegetable soups then you'll like this one.

    Fast Fiesta Soup

    1 can of black beans, rinsed and drained
    1 can of corn, do not drain
    2 small cans of Rotel tomatoes and chilies, do not drain

    Pour all ingredients into a pot and heat. That's it folks! I like to serve it with a big dollop of sour cream and shredded cheddar cheese. I also eat it with a warmed tortilla!

    You can add more water if you like your soup with more liquid but I like it just like this!

    Bacon Cheeseburger Pizza
    1 lb. lean ground beef
    1 loaf unsliced french bread
    1 medium onion, chopped
    1 jar (14 oz.) pizza sauce
    1 large tomato, seeded, chopped
    8 slices bacon, crsply cooked, crumbled
    2 cups finely shredded pizza cheese blend
    Heat oven to 400. Cut bread loaf horizontally in half. Cut bread halves crosswise in half to make 4 pieces. Arrange on large cookie sheet. Set aside. In 10 inch skillet cook beef and onion over medium high heat 5-7 minutes, drain stir in sauce spread beef mixture over bread, sprinlke with tomato, bacon and cheese. Bake 12-15 minutes. I saw this in the Betty Crocker magazine.

    Cookie Salad :)
    1 sm. pkg. vanilla or banana pudding mix
    1 cup buttermilk
    1 can pineapple tidbit, drained well
    2 cans very cherry fruit cocktail, drained well
    1 contailer cool whip, thawed
    1 pkg. stripped shortbread cookies
    Mix pudding mix with buttermilk, mix in drained fruit, reserving 5 of the cherries, mix in cool whip and 10 of the cookies, broken up, Place in nice serving bow, and smooth out place 5 whole cookies on top, place the reserved cherries in centers. Serves a lot about 10.
    Refrigerate leftovers.

    There's nothing evil about this... it's actually awesome!

    1 1/2 lbs hamburger
    1 diced green pepper
    1 large can tomatoes (I prefer stewed ones for this recipe)
    1 can kidney beans
    1 small can mushrooms
    1/4 lb bacon, diced
    2 large onions, chopped
    2 cups egg noodles
    5 stalks celery, sliced
    cheese for topping

    Directions:
    Brown bacon and hamburger. Add onions, green pepper, tomatoes, mushrooms, beans and celery. Cook noodles and mix with other ingredients. Season to taste, cover with grated cheese, and bake in moderate over for one hour.

    When we make this recipe, we usually fill our (huge) turkey roaster pan and have more than enough to do for a family of five for a couple meals... those of you with larger families (ahem Crystal :) it would do you for at least one meal and maybe a second meal (or leftovers depending on the appetites). This is easier to make than what it looks, it covers every food group and it is SO awesome!

    Cheesy Tuna Casserole

    1 pkg macaroni and cheese dinner
    1 can cream of celery soup
    1/2 cup milk
    1 can (7 oz) tuna, drained
    1 can mushrooms, drained
    2 tbsp chopped pimento
    1 green onion, sliced
    1 cup crushed potato chips

    Directions:
    Heat oven to 350 F. Prepare macaroni dinner according to package directions. Mix in soup and milk. Add tuna, mushrooms, pimento and onion. Spoon into a 2 quart casserole dish; top with potato chips. Bake 30 minutes or until heated through. Serves 4 to 6.

    Another really good recipe - as much as I don't care for Kraft dinner

    Here is my easiest and CHEAPEST recipe It costs about $3.00 for the whole recipe and it will feed a family.
    I dont have a name for it.

    2 boxes of mac and cheese (generic of coarse)
    1 can of mild salsa
    1 lb of ground turkey or hamburger (cooked)
    Make mac n cheese add salsa and cooked burger-- It is surprisingly pretty good especially when you dont have a lot of money some weeks

    I have a REALLY yummy recipe for giant cinnamon rolls if anyone is interested, It was my grandmothers and it is truely the best rolls I have ever had, I make them for Christmas morning every year as a treat. They are some work, but not real bad.

    We raise our own beef and I am always looking for recipes for beef roasts. Here is my easiest one

    1 Roast (rump, chuck,arm whatever is handy)
    1 envelope of Onion soup mix
    3 c water
    add to crock pot cook all day. If I want it more as a stew 1 hour before I want to eat it I add carrots, potatoes, mushrooms, onions, or whatever else is handy. Otherwise I serve mashed potatoes or baked potatoes and bread with some vegetable.

    Here is a quick dessert I am sure most of you tried

    Biscuit donuts

    1 tube of refrig biscuits
    1 t cinnamon with 1 c sugar

    Heat up skillet with 1/4 in cooking oil
    Poke holes in the middle of the biscuits if desired if not just leave alone
    fry one side till brown flip brown --roll in cin/sugar mix and enjoy. Kids LOVE these "homemade donuts" Ok I am starving now! Jill
